Tips:

  • Use fresh broccoli: Fresh broccoli has a more vibrant flavor and color than frozen broccoli. If you're using frozen broccoli, be sure to thaw it completely before using.
  • Don't overcook the broccoli: Broccoli should be cooked until it is tender but still slightly crisp. Overcooked broccoli will become mushy and lose its flavor.
  • Use a good quality cheese: The type of cheese you use will have a big impact on the flavor of the soup. Use a cheese that melts well and has a sharp flavor, such as cheddar or Gruyère.
  • Season the soup to taste: Be sure to season the soup with salt and pepper to taste. You may also want to add other seasonings, such as garlic powder, onion powder, or paprika.
  • Serve the soup hot: Broccoli cheese soup is best served hot. You can garnish the soup with a sprinkle of shredded cheese, crumbled bacon, or chopped chives.
