Steps:
- Stir the flour and salt together in a bowl using a fork. Pour in the olive oil and water and mix everything together. Press into a 9" pie plate on the bottom and up the sides. Put aside and make the filling.
- Preheat your oven to 400F.
- Crack the eggs into a bowl and use a whisk or a fork to beat them. Add the salt, pepper, and milk and mix together. Toss in the baby spinach and the brie (at this point I usually sneak some brie) and stir.
- Pour the filling into the crust. It will be pretty full. If you're steady, good for you but I'm not always, so I put a cookie sheet under the pie plate to catch any spills or overflows.
- Bake on the lowest rack of the oven. This helps the crust on the bottom cook since we're not pre-baking it. Bake for ~30 minutes or until the eggs are set and the crust looks golden.

Steps:
- Preheat the oven to 350°F. Spray a 9-inch pie or quiche pan with non-stick cooking spray. Chop a half cup of pecan halves and sprinkle evenly over the bottom of the pan.
- Cook the leeks: Remove the darkest green portion of the leeks and discard. Split the leeks in half lengthwise and then in half again. Cut into half-inch slices, wash and dry well. In a medium skillet, melt the butter over medium heat. When the butter starts to froth and brown slightly on the edges of the pan, add the leeks. Cook for 2 to 3 minutes until the leeks become only slightly tender. Transfer about three quarters of the leeks to the bottom of the prepared pan.
- Make the batter: Crack the eggs into a medium bowl. Whisk the eggs to break them up. Add the slices of goat cheese and season with salt and pepper. Use a whisk to break up the goat cheese and blend it with the eggs. When it is fairly smooth, whisk in the half and half, hot pepper sauce and Worcestershire.
- Bake and serve: Pour the batter over the leeks. Place the pan in the center of the oven and bake for about 20 minutes. Open the oven door and gently layer the Brie slices on top. Close the oven and bake for an additional 5 to 10 minutes or until the egg mix jiggles only slightly when you shake the pan. Cool for 10 to 15 minutes before serving. Top with remaining leeks and pecans. Drizzle with balsamic. Devour.
MINI BRIE AND APPLE QUICHES
The classic pairing of Brie and apples works beautifully in this recipe for bite-size appetizers that came to The Times in 2010 from Eating Well magazine. Premade mini phyllo cups (available in the freezer section of your grocery store) make it easy to make an elegant hors d'oeuvre in about 30 minutes. The cups do not need to be defrosted before filling and baking.

- Using a fork, blend the cheese with the butter and cream.
- Beat in the eggs.
- Force this mixture through a sieve to remove any lumps.
- Stir in the chives. Taste and season with the salt, pepper and cayenne.

HAM AND BRIE QUICHE
Steps:
- Preheat the oven to 425°F.
- To prepare the pie shell, on a clean, lightly floured work surface, roll out half a ball of dough with a rolling pin until it forms a 10-inch circle. Wrap the remaining half of the dough tightly in plastic wrap and reserve it in the refrigerator for future use for up to 5 days. Fold the circle in half, place it in a 9-inch pie plate so that the edges of the circle drop over the rim, and unfold the dough to completely cover the pie plate. Brush the edges of the pie shell with heavy cream to create a perfect, golden brown finish. Keep the pie shell close by, as you will add ingredients one at a time.
- To prepare the filling, melt the butter in a medium skillet over medium heat. Add the onions and sauté until they achieve a golden brown color, approximately 5 minutes. Spread the sautéed onions across the bottom of the pie shell.
- Add the vegetable oil to the skillet and fry the ham until it turns a golden brown. Place the ham in the pie shell on top of the onion layer, distributing it evenly. Layer the brie slices over the ham.
- In a medium bowl, using an electric mixer set on medium speed, combine the eggs, half-and-half, salt, and pepper. Pour the egg mixture into the pie shell, covering the onions, ham, and brie.
- To bake, place the pie plate on a baking sheet and bake for 15 minutes. Reduce the heat to 350°F and continue baking for 40 minutes, or until the quiche is firm in the middle. Transfer the pie plate to a wire cooling rack and allow the quiche to cool and set for at least 10 minutes before serving.
- Cooked Ham and Brie Quiche can be stored in the refrigerator for up to 3 days. An uncooked quiche can be stored in the freezer for up to 2 months. To optimally keep quiche, put it in the freezer uncovered and let it freeze on a flat surface. Once the quiche has frozen, wrap it tightly in plastic wrap and return it to the freezer.
Tips:
- Use a good quality, flavorful brie cheese. A triple-cream brie will give you the best results.
- If you don't have heavy cream, you can use milk instead. However, the quiche will not be as rich and creamy.
- You can add other ingredients to the quiche, such as cooked bacon, ham, or vegetables.
- Be sure to preheat the oven before you start baking the quiche. This will help to ensure that the crust cooks evenly.
- Bake the quiche until the center is set and the crust is golden brown.
Conclusion:
Quiche with brie is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's also a great way to use up leftover brie cheese. With its creamy texture and rich flavor, quiche with brie is sure to be a hit with your family and friends.
