CHEF JOHN'S QUESO DIP

Chef John's Queso Dip image

I used to make something very similar to this queso dip at the Mexican restaurant I worked at in college, where we called it 'chili con queso.' At first I thought it could be thicker, but later I realized the saucy texture was the key to its addictive irresistibility. Instead of too much cheese piled up on your chip, we just get a beautiful, silky coating, and as soon as you finish one, you can't wait to dip another, and another, and another, until there are no chips left.

TEXAS BEST CHEESE DIP (CHILE CON QUESO)

Texas Best Cheese Dip (Chile Con Queso) image

This is a delicious cheese dip that my daughter makes. The cream cheese gives it a wonderful consistency. All the fresh ingredients make this a dip that you will be asked for over and over again! Please note I have put "to taste" on alot of the ingredients as it depends on how big your bunch of veggies are. If you actually get lucky enough to have any left it keeps in the fridge a good while and reheats great. I usually serve/take this dip in a crockpot so it stays warm.

Categories     Bread     Yeast Bread Recipes     Pretzel Recipes

Time 2h5m

Yield 8

Number Of Ingredients 22

1 ½ cups warm water
1 tablespoon white sugar
2 teaspoons salt
1 (.25 ounce) package active dry yeast
4 ½ cups all-purpose flour
½ stick unsalted butter, melted and cooled
cooking spray
10 cups water
⅔ cup baking soda
1 egg
1 tablespoon coarse salt to taste
½ stick unsalted butter, melted and cooled
1 cup white American cheese
½ cup milk, or more as needed
1 tablespoon olive oil
½ medium yellow onion, diced
1 clove garlic, minced
1 teaspoon ground cumin
½ teaspoon salt
½ cup fire-roasted diced tomatoes, drained
¼ (4 ounce) can pickled jalapeno pepper slices, diced
2 tablespoons diced green chiles

Steps:

  • Combine warm water, sugar, and salt in the bowl of a stand mixer and sprinkle yeast on top. Let sit until mixture begins to foam, about 5 minutes. Add flour and butter. Mix on low using the dough hook attachment. Increase speed slightly and knead until dough is smooth and pulls away from the sides of the bowl, 4 to 5 minutes.
  • Grease a large bowl with cooking spray. Shape dough into a ball and place in the bowl. Cover with plastic wrap and let sit in a warm place until doubled in size, about 1 hour.
  • Transfer the dough to a lightly greased work surface and cut into 8 equal pieces.
  • Preheat the oven to 450 degrees F (232 degrees C). Line 2 sheet pans with parchment paper and spray with cooking spray. Bring water to a boil in a large pot for the baking soda bath.
  • Roll each piece of dough into thin rope about 18 to 20 inches long and 1-inch thick. Form into a U shape. Cross the ends over each other toward the center of the U, twist again, and press into the U. Place pretzels on the prepared sheet pans.
  • Pour baking soda into the boiling water. Boil pretzels, one at a time, for 30 seconds each. Return them to the parchment paper using a wide slotted spoon. Mix egg with a splash of water and brush onto the pretzels; sprinkle with salt.
  • Bake in the preheated oven, rotating pans halfway through, until golden brown, 12 to 14 minutes. Transfer pans to wire cooling racks. Brush pretzels with multiple layers of melted butter while still hot.
  • Melt American cheese and milk together in a bowl set over a pot of simmering water.
  • Meanwhile, heat olive oil in a skillet over medium heat. Add onion, garlic, cumin, and salt; cook until fragrant and soft, 3 or 4 minutes. Mix onion mixture into the melted cheese, along with diced tomatoes and green chiles. Stir in more milk if queso seems too thick. Serve dip with pretzels for dipping.

Tips and Conclusion:

Indulge in a delectable queso dip experience with these essential tips and conclusion derived from the comprehensive queso dip recipes presented in the article:

Tips:

  • Embrace the Melting Magic: Allow your cheese to reach room temperature before the dip-making process. This crucial step ensures a smooth, creamy texture that melts evenly, preventing a grainy or lumpy consistency.
  • Master the Cheese Symphony: Experiment with a variety of cheese blends to achieve your desired flavor profile. Whether you prefer a classic cheddar-based dip, a blend of gooey mozzarella and creamy fontina, or a sharp blend of pepper jack and queso Oaxaca, the possibilities are endless.
  • Spice Up Your Dip: Elevate your queso dip with a symphony of spices and seasonings. Incorporate chili powder, cumin, paprika, and a touch of cayenne pepper for a smoky, savory kick. Don't be afraid to experiment with different spice combinations to create a unique and flavorful dip.
  • Achieve the Perfect Consistency: Adjust the consistency of your queso dip to your preference. For a thicker, more substantial dip, use less milk or broth. For a thinner, more pourable dip, add more liquid. You can also add a cornstarch slurry to achieve a thicker consistency.
  • Enhance with Toppings: Unleash your creativity by adding a variety of toppings to your queso dip. Diced tomatoes, chopped cilantro, crumbled bacon, sliced jalapeños, and diced avocado are just a few suggestions to tantalize your taste buds.

Conclusion:

In conclusion, the art of crafting a perfect queso dip lies in the harmonious blending of creamy cheese, enticing spices, and flavorful toppings. With a little practice and experimentation, you'll be able to whip up a dip that will delight your family and friends. So, gather your ingredients, embark on this culinary journey, and prepare to savor a queso dip experience that will leave you craving for more.
