Drop mixture onto centers of cookie molds. Close iron and cook 30-60 seconds. Remove finished cookies and lay flat to cool.
Tips:
- Use fresh pumpkin puree: Fresh pumpkin puree gives the pizzelle a more vibrant color and flavor than canned puree.
- Don't overmix the batter: Overmixing the batter will make the pizzelle tough. Mix just until the ingredients are combined.
- Be careful not to overcook the pizzelle: Overcooked pizzelle will be dry and crumbly. Cook them just until they are golden brown around the edges.
- Let the pizzelle cool completely before storing them: This will help them to stay crispy.
- Store the pizzelle in an airtight container at room temperature: They will keep for up to 2 weeks.

Pumpkin pizzelle are a delicious and easy-to-make treat that are perfect for fall gatherings. They are also a great way to use up leftover pumpkin puree. With a few simple ingredients and a little bit of time, you can create a batch of pizzelle that will impress your friends and family.
