1/4 cup chilled solid vegetable shortening, cut into small pieces
1 large egg yolk
2 tablespoons (or more) ice water

1 1/2 teaspoons ground ginger
1/2 cup (1 stick) unsalted butter, cut into small pieces, room temperature

Steps:

  • For crust:

"KNOCK YOUR SOCKS OFF" PUMPKIN PIE

I haven't tried this out yet, but the ginger in it sounds really good. I found the recipe on OrganicValley.com. The site says "The name says it all! Very rich - for a lighter dessert, prepare without the streusel topping." (I'm guessing on the prep time.)

Tips:

  • To make sure your pie dough is perfectly flaky, use ice-cold butter and water. This will help prevent the gluten in the flour from developing too much, which can make the dough tough.
  • When rolling out the pie dough, be sure to use a light touch. Overworking the dough will make it tough.
  • If you don't have a pie plate, you can use a 9-inch springform pan. Just be sure to line the bottom of the pan with parchment paper to prevent the pie from sticking.
  • To prevent the pumpkin pie filling from curdling, whisk the eggs and sugar together in a separate bowl before adding them to the pumpkin mixture.
  • Be sure to bake the pie until the center is set. This will take about 45-50 minutes. If the center is still liquid, continue baking for a few more minutes.

Conclusion:

This pumpkin pie with ginger streusel is the perfect fall dessert. It's easy to make and always a crowd-pleaser. The combination of pumpkin, ginger, and cinnamon is warm and inviting, and the streusel topping adds a delicious crunch. Whether you're serving it for Thanksgiving dinner or a casual get-together, this pie is sure to be a hit.
