1 cup canned unsweetened pumpkin puree
2 eggs, lightly beaten
½ cup butter, melted
¼ cup buttermilk
2 teaspoons vanilla extract
1 cup dried, sweetened cranberries

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease or place paper muffin cups in a 12 cup muffin tin.
  • Mix the flour, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg together in a mixing bowl.

7 cups 1-inch bread cubes
1 1/4 cup frozen whole cranberries
3 eggs
3 cups milk
1 can (15 oz) pumpkin (not pumpkin pie mix)
1 tablespoon orange peel
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/2 cup packed brown sugar
1 teaspoon vanilla
3/4 teaspoon salt
1 or 2 containers (6 oz each) Yoplait® Original 99% Fat Free French vanilla yogurt
1/2 cup maple syrup

Steps:

  • Spray 9-inch square baking dish with cooking spray.
  • Spread half of the bread in baking dish; top with half of the cranberries. Repeat.
  • In large bowl, beat eggs, milk, pumpkin, orange peel, cinnamon, ginger, nutmeg, brown sugar, vanilla and salt with whisk until well blended; pour over mixture in pan. 4 large eggs

2 tablespoons butter, melted
1 teaspoon vanilla extract

1 cup brown sugar
1 1/4 cups rolled oats
2 cups whole wheat flour
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon pumpkin pie spice (heaping)
6 tablespoons applesauce
6 tablespoons pumpkin puree (if using homemade, make sure it is thick like canned)
2 egg whites
3/4 teaspoon vanilla extract
1/2 cup dried cranberries

  • Preheat the oven to 350°F.
