Time 50m

Yield 18 muffins, 18 serving(s)

Number Of Ingredients 13

2 1/2 cups all-purpose flour
2 cups sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, lightly beaten
1 cup canned pumpkin
1/2 cup vegetable oil
2 cups finely chopped peeled apples
1/4 cup sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • In a large bowl, combine flour, sugar, pumpkin pie spice, baking soda and salt. Combine eggs, pumpkin and oil; stir into dry ingredients just until moistened. Fold in apples. Fill greased or paper-lined muffin cups three-fourths full. For topping, combine sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle 1 teaspoon over each muffin. Bake at 350° for 30-35 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack. Yield: about 1-1/2 dozen.

Tips:

  • Mise en Place: Before you start baking, measure and gather all your ingredients and equipment. This will make the baking process smoother and more efficient.
  • Muffin Pan Preparation: Grease or line a muffin pan with paper liners to prevent the muffins from sticking.
  • Muffin Batter Consistency: The muffin batter should be thick and creamy, but not too runny. If the batter is too thin, the muffins may not rise properly.
  • Folding in Ingredients: When folding in ingredients such as chopped apples or walnuts, do so gently to avoid overmixing the batter.
  • Streusel Topping: For a crispy streusel topping, use cold butter and flour. You can also add spices like cinnamon or nutmeg for extra flavor.
  • Baking Time and Temperature: Bake the muffins according to the recipe instructions. Overbaking can dry out the muffins, while underbaking can leave them raw in the center.
  • Cooling: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

Pumpkin apple muffins with streusel topping are a delicious and festive treat that can be enjoyed for breakfast, brunch, or dessert. By following the tips and instructions provided in this recipe, you can create moist, flavorful muffins with a crispy, crunchy topping. These muffins are perfect for fall gatherings and make a great addition to any holiday brunch or bake sale.
