1 1/3 tablespoons instant yeast
1 cup flax seed meal
1/2 cup molasses
3 tablespoons salt
1 cup rye flakes
10 cups wholemeal rye flour (1 kg)
10 cups white flour (approximate, 1 kg)

Steps:

  • Heat water and beer until luke warm,.
  • Dissolve yeast in liquid.
  • Add remaining ingredients in stand mixer (add flours gradually, keeping some of the white flour back).
  • Knead the dough until slightly tacky - about 10 minutes. You may wish to hand knead for a few minutes to ensure the dough has the right consistency.

1 cup whole wheat flour
1/2 cup rye flour
2 packages (1/4 ounce each) active dry yeast
1 tablespoon salt
3-1/2 to 4 cups bread flour
1-1/2 cups unsweetened apple juice
3/4 cup plain yogurt
1/4 cup butter, cubed
1 large egg, room temperature
2 cups dried apples, chopped
1 cup raisins
1 cup chopped walnuts
1 large egg, lightly beaten, optional

Steps:

  • In a large bowl, mix whole wheat flour, rye flour, yeast, salt and 2 cups bread flour. In a small saucepan, heat apple juice, yogurt and butter to 120°-130°. The original version of this recipe comes from the Dec/Jan 1997 issue of Taste Of Home magazine. I have since added the sage flavored sausage, and will either skip the mixed nuts or add only pecans. I get wonderful compliments on this stuffing every time i serve it, and the best compliments are when i'm asked to share the recipe or bring the stuffing to the next holiday. Be sure to use 3/4 light rye to 1/4 dark rye, or substitute all light rye, so the rye doesn't overpower. In this combination the flavor is not too strong, just enough that friends and family recognize it as something extra special you've done with your dressing. We've also been successful making this recipe gluten free by using gluten free white bread, broth and the regular flavor of Jimmy Dean Sausage.
