3 tablespoons finely chopped fresh mint leaves
3 cloves garlic, finely minced
2 ½ tablespoons water
2 tablespoons unsweetened shredded coconut
1 tablespoon finely chopped fresh cilantro
1 teaspoon cumin seeds
½ teaspoon ground ginger
2 tablespoons olive oil
2 whole cloves
2 cardamom pod
1 star anise
½ teaspoon ground cinnamon
1 small bay leaf, torn into pieces
1 onion, diced
¼ teaspoon ground turmeric
¼ teaspoon red chile powder
4 small Yukon Gold potatoes, sliced into rounds, then halved (skin on)
1 tomato, diced
½ cup frozen peas
1 cup basmati rice
1 ¼ cups water
¼ teaspoon salt

Steps:

  • Combine green chiles, mint leaves, garlic, 2 1/2 tablespoons water, shredded coconut, cilantro, cumin seeds, and ginger in a mortar; grind with a pestle into a paste.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add olive oil and heat until warm. Add cloves, cardamom pods, star anise, bay leaf, and cinnamon. We would visit and her mother almost always had a batch of this very moist, dense, rich cake that was almost pudding like in consistency. She cut it into small squares to serve but I often had several as I find it irresistible.

2 tablespoons cocoa
1/2 cup Carnation instant milk (condensed milk, not sweetened)

500 g sultanas
100 g mixed peel
1 dash brandy (a splash)

1 small onion, sliced
2 green chilies
1 1/2 limes, juice of or 1 raw mango, chopped and peeled
1 1/2 teaspoons salt

250 g cottage cheese (paneer, 1/2 inch triangles)
1 tablespoon oil
2 black cardamom pods
4 green cardamoms
6 cloves
8 black peppercorns
1 inch cinnamon stick
3 -4 green chilies (broken)
2 medium sized onions (grated)
2 tablespoons poppy seed paste (khuskhus)
salt
2 tablespoons fresh cream

Steps:

  • Heat oil in a pan.
  • Add black cardamoms, green cardamoms, cloves, black peppercorns and cinnamon and sauté.
  • Add broken green chillies, grated onions and continue to sauté till the onions brown lightly.
  • Tie up the mint sprigs together and add to the pan.
  • Bruise the leaves lightly, add one and a half cups of water and mix.
  • Add poppy seed paste and mix. Add salt and bring the gravy to a boil.
  • Let it simmer for three to four minutes.
  • Take the mint sprigs out and add the paneer triangles.
  • Mix with a light hand and cook for three to four minutes or till the paneer triangles are heated through.
  • Add fresh cream and take it off the heat.Serve hot.
