Yield 4

Number Of Ingredients 11

1 ½ teaspoons salt
1 ½ teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon dried thyme
½ teaspoon freshly ground black pepper
½ teaspoon freshly ground white pepper
½ teaspoon garlic powder
1 (3 1/2) pound whole roasting chicken

  • Pour chicken stock into the pot and scrape the bottom with a wooden spoon to loosen any browned bits.
  • Place a steamer rack trivet in the bottom of the pressure cooker pot, then place the whole chicken, breast side up, on top of the trivet.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow about 6 minutes for pressure to build.
  • Let pressure release naturally according to manufacturer's instructions, 25 to 35 minutes. Unlock lid and remove.
  • Open the lid and carefully remove the chicken from the pressure cooker. Allow the chicken to rest for 10 minutes before carving.

Tips:

  • Choosing the right chicken: Look for boneless, skinless chicken breasts or thighs to ensure even cooking and tender results.
  • Peach preparation: Select ripe, juicy peaches. Peel and slice them evenly for a consistent texture and flavor distribution.
  • Seasoning the chicken: Generously coat the chicken pieces in a blend of garlic powder, onion powder, salt, and pepper. This simple seasoning will enhance the natural flavors of the chicken and peaches.
  • Creating the sauce: Combine honey, soy sauce, ginger, garlic, and cornstarch in a bowl. Mix well to create a flavorful and slightly thickened sauce.
  • Pressure cooking: Secure the lid of the pressure cooker and set it to cook on high pressure for 10 minutes. This cooking method locks in moisture and flavors while ensuring the chicken is cooked through.
  • Adding the peaches: Once the cooking time is complete, carefully release the pressure and open the lid. Add the sliced peaches and gently stir to combine them with the chicken and sauce.
  • Garnish and serve: Transfer the chicken and peach mixture to a serving dish. Garnish with chopped green onions or cilantro for an extra layer of flavor and color. Serve immediately with steamed rice or your favorite side dishes.
