140g plain flour
1 tsp baking powder
2 eggs
125ml milk
2 tbsp yellow or red Thai curry paste
140g frozen sweetcorn kernels, defrosted
small bunch spring onions , chopped
small bunch coriander leaves, chopped
140g raw peeled king prawns , chopped
vegetable oil , for frying
sweet chilli sauce , to serve

Steps:

  • Tip the flour, baking powder and ½ tsp salt into a bowl or jug. Whisk in the eggs and milk to form a thick smooth batter. Stir the curry paste into the batter and mix until combined. Tip the sweetcorn, spring onions, coriander and prawns into another larger bowl.
  • Pour the batter onto the sweetcorn, mix and fold through to combine. Heat a few tbsp of oil in a large, non-stick pan until hot. Fry large spoonfuls of the batter at a time (do this is batches), for about 2 mins each side, or until golden and cooked through. You will make about 8-10. Keep warm in a low oven while you cook the rest. Serve with sweet chilli sauce.

6 to 8 tablespoons (3/4 to 1 stick) unsalted butter
5 scallions, thinly sliced
1 1/4 cups fresh corn kernels (2 to 3 ears)
12 ounces freshly cooked lobster meat, 1/4-inch-diced
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon paprika
3/4 teaspoon Old Bay seasoning
Kosher salt
2 extra-large eggs, lightly beaten
1/2 cup half-and-half
2 teaspoons minced garlic (2 cloves)
1/2 teaspoon saffron threads
2 teaspoons sriracha chili sauce
1 tablespoon freshly squeezed lemon juice
2/3 cup good mayonnaise, such as Hellmann's
Freshly ground black pepper

Steps:

  • Melt 2 tablespoons of the butter in a medium (10-inch) saute pan over medium heat. Add the scallions and corn and saute for 3 minutes, or until softened. Add the lobster and cook for 1 minute. Set aside.
  • Combine the flour, baking powder, paprika, Old Bay seasoning, and 1 teaspoon salt in a large mixing bowl. Make a well in the center and whisk in the eggs and half-and-half, stirring until the mixture is smooth, like a thick pancake batter. Stir in the corn and lobster mixture. (The batter may be made up to an hour ahead and refrigerated.)
  • For the sauce, place the garlic, saffron, sriracha, lemon juice, mayonnaise, 1/2 teaspoon salt, and 1/4 teaspoon pepper in the bowl of a food processor fitted with the steel blade and puree until smooth.
  • To make the fritters, heat 2 to 3 tablespoons of the butter in a large (12-inch) saute pan over medium to medium-high heat. For each fritter, drop 2 rounded tablespoons of the batter into the hot butter and cook for 2 to 3 minutes on each side, until golden brown and firm to the touch. Don't crowd the skillet or they won't brown evenly. Repeat until all the batter is used, adding butter as necessary. Serve the fritters hot with a dollop of sauce on the side.

4 green onions, chopped
2 stalks celery, finely chopped

2 tablespoons cilantro, chopped (fresh is best, if using dried, 1/2 the amount)

1 teaspoon ground coriander

2 teaspoons orange rind, grated
1/3 cup orange juice
2 tablespoons sugar

1 tablespoon white vinegar
1 tablespoon sesame oil
2 cloves garlic, minced
2 teaspoons ginger, root peeled and minced
2 teaspoons hot chili oil

  • Peel and devein the shrimp; cut into 1/2 inch pieces.
  • Combine the shrimp, corn and next 9 ingredients in a large bowl; stir well.
  • Pour oil to a depth of 1 inch in a heavy saucepan; heat to 375 degrees. Drop shrimp mixture by tablespoonfuls into the hot oil; fry 2 minutes on each side or until golden. Do not crowd the fritters, cook in batches. Drain on paper towels. Serve immediately with sauce.

1¼ teaspoons kosher salt, divided, plus more to taste
¾ cup corn flour, such as Bob's Red Mill
½ teaspoon baking powder
½ teaspoon Old Bay seasoning
1 large egg
1 cup buttermilk
4 scallions, thinly sliced
1 red or green jalapeño, seeded, finely chopped
½ pound small shrimp, peeled, deveined, coarsely chopped
1½ cups fresh corn kernels (from about 2 ears of corn)
¾ cup grated cheddar (about 3 ounces)
Grapeseed or canola oil (for frying)
Lemon wedges (for serving)

Steps:

  • Whisk together sour cream, lemon juice, and ¼ tsp. salt; set aside for serving.

1 cup small size soft skin prawns, discard head tail and clean
3 cups all-purpose flour
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon bicarbonate of soda
1 cup bean sprouts
1/2 cup leek, cut into 2 cm
1 onion, thinly slice
1 red chili pepper, thinly slice
1/2 cup corn kernel
1 cup water (or more)
oil (for frying)

Steps:

  • Combine all ingredients and a cup of warm water.
  • Mix thoroughly with a spoon until all ingredients are really combine (about 1 minute).
  • If the mixture is too thick add more water.

1 (7 ounce) can corn, drained (reserve juice)
1/4 lb shrimp, chopped fine and dried well between paper towels
1/2 shallot, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
1 egg
1/2 cup heavy cream
1/3 cup yellow cornmeal
1/4 cup all-purpose flour
1/4 cup mesa cornflour
1 teaspoon baking powder
1/16 teaspoon cayenne pepper
1/4 teaspoon salt
1/2 cup sour cream, to top (optional)

Steps:

  • Over medium heat, in a medium sauté pan, heat the olive oil. Sauté the corn, shrimp, shallots, salt, and black pepper for 5 minutes. Stirring occasionally.
  • Remove from heat. In a mixing bowl, whisk the eggs and cream. Add the cornmeal, flours, baking powder, cayenne pepper, salt, and reserved corn juice. Mix until the batter is fully incorporated then gently fold in the corn.
  • Using a small amount of vegetable oil, heat a saute pan over medium-high heat. Spoon by heaping tablespoons of batter into the pan leaving a 1" space between the cakes. (You will need to do this in batches). Cook 2 minutes on the first side and flip over. Continue cooking for 1 minute and remove from the heat. Serve warm with a dollop of sour cream.
