Tips:

  • Use high-quality chocolate for a richer flavor. Dark chocolate with a cocoa content of at least 70% is ideal.
  • If you don't have heavy cream, you can use milk instead. However, the ganache will not be as thick and creamy.
  • Make sure the chocolate and cream are completely smooth before adding them to the egg yolks. This will help prevent the ganache from curdling.
  • Don't overcook the ganache. It should be thick and glossy, but not too firm.
  • Let the ganache cool slightly before using it. This will help it set properly.
  • When decorating with the ganache, use a piping bag fitted with a star tip for a professional look.

Conclusion:

These pots o' gold are a delicious and easy-to-make treat that are perfect for any occasion. The rich chocolate ganache is perfectly complemented by the sweet and flaky pastry cups. Whether you're serving them for a special occasion or just as a simple dessert, these pots o' gold are sure to be a hit.
