3 tablespoons canola oil
1/4 cup beef broth
1/2 teaspoon Worcestershire sauce
1 teaspoon salt

  • In a large skillet, saute the onion, peppers and potatoes in oil for 4 minutes or until vegetables are crisp-tender. SERVES 4 . . INCREASE INGREDIENTS AS NECESSARY FOR LARGER GROUP
1 medium chopped and diced onion
1/2 medium chopped and diced green bell pepper
1/2 medium chopped & diced red bell pepper
4 large potatoes, reds or white potatoes cubed into 1/2 inch cubes
1 1/2 Tbsp butter, melted
3 Tbsp oil
1/4 c beef broth/ or use water if no broth
3/4 Tbsp worchestershire sauce
1 tsp salt and pepper

Steps:

  • 1. In Large Skillet, Saute, onions, Peppers and Potatoes in the Oil and Butter, For about 5 -7 Min. MAX until Vegies are CRISP tender. (Do not allow the onion to scorch.) Potatoes Can brown on all sides. But is Not Necessary.
  • 2. Meanwhile, in a Small Bowl, Combine the BROTH, Worchestershire Sauce, Salt & Pepper. MIX well. NOW POUR this over the Potatoes and VEGIES. Cover and COOK for about-10 min . . Till Tender, Stir Occasionally.

I'm tired of buying this at the store, so I decided to make my own. In my opinion, this is the best way to prepare potatoes for a typical breakfast. This recipe lasts a long time in the freezer. Just pull the bag out of the freezer and toss as much as you want onto a hot pan or griddle. Add more vegetable oil when cooking if needed. Enjoy.

1 large green bell pepper, cut into 1/2-inch dice
1 large red bell pepper, cut into 1/2-inch dice

¼ cup vegetable oil

1 1/2 tablespoons unsalted butter
1 1/2 tablespoons olive oil
1 large yellow onion, finely chopped
1/2 small red bell pepper, seeded,deribbed and finely diced
1/2 small green bell pepper, seeded,deribbed and finely diced
2 lbs small white potatoes or 2 lbs red potatoes, peeled and cut into 1/2 inch cubes
2 tablespoons finely chopped fresh parsley

Steps:

  • In a large frying pan over medium-high heat, melt 1/2 tablespoon of the butter with 1/2 tablespoon of the olive oil.
  • Add the onion and saute, stirring occasionally, until golden brown and just beginning to caramelize, 5-7 minutes.
