CURRIED SWEET POTATO SURPRISE

Curried Sweet Potato Surprise image

I was given a recipe as an alternative to the traditional 'sweet' sweet potato dishes. I was very dubious at first, but I went ahead, made it with fresh sweet potatoes (not canned, as they are not available in Canada), made my own adjustments and gave it a go. The finished product looked, smelled and tasted FANTASTIC! Not mushy, and the flavors mingle beautifully! People are pleasantly surprised when they taste it. Enjoy!

POTATO SAUTE SURPRISE

Potato Saute Surprise image

This very simple recipe invented by my wife, Michelle, is called 'surprise' because I thought 'OK, sauteed potatoes', but then the taste was so much better and out of the ordinary I'm posting it because everyone deserves a chance to try it. The trick about is that everything but the potatoes seems to disappear into background but the flavours are there to surprise you. Peel the tomatoes the easy way. Drop them into boiling water for a 15-20 seconds. Run under cold water until cooled enough to handle then skins should nearly fall off. I hope you enjoy as much as I do, John

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for this recipe, as they are starchy and hold their shape well. You can also use Yukon Gold potatoes, but they may be slightly more difficult to mash.
  • Cook the potatoes thoroughly: Before you can mash them, the potatoes need to be cooked until they are tender. You can boil them, steam them, or bake them until they are easily pierced with a fork.
  • Season the potatoes well: Don't skimp on the salt and pepper! Season the potatoes liberally to taste before you mash them. You can also add other seasonings, such as garlic powder, onion powder, or dried herbs.
  • Use a potato ricer or food mill: For the smoothest, creamiest mashed potatoes, use a potato ricer or food mill to mash them. This will remove any lumps and give you a light and fluffy texture.
  • Serve immediately: Mashed potatoes are best served immediately after they are made. If you need to make them ahead of time, you can store them in the refrigerator for up to 3 days. Reheat them gently over low heat, stirring occasionally, until they are warmed through.

Potato Surprise is a delicious and versatile dish that can be served as a side dish or a main course. With its creamy texture and cheesy flavor, it's sure to be a hit with everyone at your table. So next time you're looking for a quick and easy recipe, give Potato Surprise a try!
