PIEROGIES WITH POTATO AND CHEESE FILLING

2 cups flour
1/2 cup water
1 egg
1/2 teaspoon salt
3 large potatoes
8 ounces sharp-tasting cheese
Salt
Pepper

Steps:

  • Mix flour, water, and egg and salt together. Knead on a lightly floured surface until smooth. Cover dough with bowl and let rest for 30 minutes.
  • Boil potatoes until soft. Drain and rinse. Add cheese. Let stand a few minutes until cheese melts. Then fold potatoes and cheese together.
  • Roll out dough about 1/8-inch thick. Cut into 3-inch squares. Fill each square of dough with one teaspoon of potato and cheese filling. Fold in half and pinch ends together to seal. Drop in hot boiling water and simmer for 8 minutes. Drain and fry in butter a few minutes until heated through. Chopped onions may be added to the butter, if desired. Salt and pepper, to taste.

NANA'S PA DUTCH POTATO AND BREAD FILLING

This is my Nana's mother's recipe, which was probably her mother's (who only spoke Pa-German). Nana made this every holiday with turkey and ham. It's a bit of work, but well worth it. Nana always made it the day before and baked it the day of eating it.

5 lbs potatoes, scrubbed, peeled and cut up
4 tablespoons butter
1 1/2 cups milk
1 cup chicken stock
3/4 cup butter (1 1/2 sticks)
3 cups finely chopped celery (use the leaves also)
2 cups finely chopped sweet onions
1/4 cup chopped fresh parsley
1/2 teaspoon salt (or more to taste)
1/2 teaspoon pepper
7 -8 slices toasted white bread, cut into small cubes
3 eggs, beaten

Steps:

  • Boil potatoes until tender; drain. Place in large bowl and mash with 4 tbsp butter, milk and chicken stock.
  • While potatoes are cooking, in a large skillet over med-high heat, melt 3/4 cup butter; add chopped celery, onion, and parsley; sautee until tender -- about 7-10 minutes. Add salt and pepper. Reduce heat to medium and add the toasted bread cubes. Cook, stirring frequently, for another 4-5 minutes.
  • Remove from heat and fold into the mashed potato mixture. Fold in the beaten eggs and stir everything together well.
  • Pour into a greased/sprayed 13" x 9" (or larger) pan. Cover and bake at 350 for 25 minutes. Uncover and bake for another 15-20 minutes or until lightly browning on top.
  • Serve.

In Pennsylvania Dutch County, we call it "filling." It is a potato and bread filling. I never measure, so this is what I do.

6 large potatoes, cut in pieces
2 medium onions, chopped
6 stalks celery, chopped small
Enough vegetable oil for saute
8-10 pieces of old bread, broken into bite-size pieces
1/4 to 1/2 cup milk
4 raw eggs, beaten
Salt and pepper

4-5 tablespoons fresh parsley, chopped fine
1-2 tablespoons poultry seasoning
Stock from the giblets and neck

1/2 stick of butter, cut into pieces

Steps:

  • Boil potatoes in salted water. Saute onion and celery in oil. Add salt and pepper to taste. Boil the giblets and neck in salted water to make stock.
  • Moisten bread with milk. Smash the potatoes in a large bowl. (I use a small roasting pan, and then I roast the filling right in it.) Add all other ingredients including all spices and oil from saute. When adding the eggs, add a little of the hot mixture to the eggs first and beat well, so as to not scramble them when they go into the whole mix.
  • Mix thoroughly. If it needs more moisture, add the stock, a little at a time. Taste to make sure enough spices are added. Add more salt and pepper and poultry seasoning, if needed.
  • Bake at 350 degrees in a greased casserole dish or roasting pan until very hot and browned, usually one hour. Dot the top with pats of butter before putting into oven. I know some people chop the giblets and add to the filling, but I don't.

3 large potatoes, of your choice peeled and cut into small chunks
3/4 cup grated sharp cheddar cheese
1 tablespoon butter
3/4 cup finely chopped onion (optional)
3 garlic cloves, minced (optional)
2 large eggs, beaten
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • In a medium size saucepan, add potatoes and just cover with water.
  • Bring to boil, reduce heat and cook for about 15 minutes or until potatoes are tender.
  • Drain and mash potatoes.
  • Add grated cheese and mix well.
  • Cheese will melt and will be incorporated with the potatoes.
  • In a frying pan, add butter, chopped onions and garlic and saute' for 3 to 4 minutes.
  • Add saute'ed onion/garlic to the potatoes in the saucepan and mix well.
  • Add beaten eggs, salt and pepper and mix well.
  • The amount of filling to use will depend on the size of Mini Form you will be using.
  • If using the 4" Mini Form, use 1 heaping tablespoon of filling.
  • The filling mix handles best when cooled.

1 1/2 to 2 pounds medium shrimp
Juice of one lime
1 tablespoon chopped coriander stems or shadowbene (Trinidadian chives)
2 tablespoons vegetable oil or ghee
2 large onions, chopped
10 cloves garlic, peeled, mashed and chopped
2 1/2 tablespoons Trinidadian or Guyanese curry powder (preferably Turban, Indi or Chief brand)
1 pound potatoes, peeled and chopped into 1/2-inch dice
1/2 yellow Scotch bonnet pepper
Salt to taste

Steps:

  • Peel and clean the shrimp, reserving shells. Put the shrimp in a bowl and mix in the lime juice and chopped coriander stems (or shadowbene). Set aside for at least 1/2 hour.
  • Meanwhile, place the reserved shrimp shells in a large stockpot and cover with a quart of water. Simmer over medium heat for 1 hour. Strain and reserve.
  • In a large, deep skillet, heat the oil or ghee over medium high heat and saute the onions, stirring constantly, for 4 to 5 minutes, or until they begin to stick to the pan and turn light brown. Add the garlic and saute for 2 minutes. Add the curry powder and stir for 1 minute, taking care not to burn the spice. Add the chopped potatoes, stirring to coat with the curry-onion-garlic mixture.
  • Add the Scotch bonnet pepper and 2 cups of the shrimp stock. Stir and bring to a simmer. Cover, and simmer slowly for about 40 to 45 minutes, or until the potatoes soften and begin to thicken the sauce. (If the mixture becomes too dry, add additional shrimp stock.)
  • Add the marinated shrimps. Cook, uncovered, over medium heat for 10 minutes. Add salt to taste. Let cool a few minutes before adding to roti.

This was a staple side dish for all holidays when growing up.. there are so many good dishes my Gram used to make..some use it to stuff a turkey, we just had it as a side dish..

6 medium potatoes
3 stalks celery
1 medium sweet onion
1/2 c parsley
4-5 slice white bread, have used italian
1/2 c milk
1 egg
2 tsp all purpose flour
1 1/2 stick butter
salt and pepper to taste

Steps:

  • 1. Peel and cut the potatoes into quarter pieces and place in a medium size kettle. Cover the potatoes with water and bring to a boil. Boil for 15 minutes or until soft.
  • 2. In a separate pan place the chopped celery and onion with ½ cup butter and saute until the mixture starts to become soft (5 minutes on medium-high heat).
  • 3. Chop the bread into small cubes and place into celery and onion mixture with two tablespoons of butter. Saute until the bread gets covered with the butter mixture (about 3 minutes).
  • 4. Drain the water out of the potatoes. Mash the potatoes and add 4 tablespoons of butter. Mix milk and egg together and add to the potato mixture. Add celery mixture, parsley and flour. Add pepper and salt to taste, and mix well.
  • 5. Put the potatoes into a well-greased casserole dish. Place the remaining butter on top of the potatoes. Bake at 350 for 40 minutes, or until the top of the casserole is brown.
  • 6. At times gram would put crumbled smoked bacon in to change it up a bit.

Pierogi can be made with a wide variety of fillings, but the most common are minced cooked meat, sauerkraut & mushrooms, cheese and potatoes, sweet cheese (usually with a touch of vanilla) and blueberries (in summer). Other fillings include buckwheat groats, potatoes & onions and lentils. Common toppings include fried fat-back nuggets, sour cream, melted butter or butter-browned bread crumbs.

1 cup cottage cheese, drained

pepper, to taste
2 1/4 cups flour

Steps:

  • Combine all of the ingredients listed under filling and refrigerate until ready to assemble pierogi.
  • Combine flour, salt and butter in food processor.
  • In a separate bowl, blend together egg, egg yolk, milk and sour cream.
  • Add egg mixture to flour mixture and process until dough cleans sides of bowl and sticks together (the dough will be slightly sticky).
  • Remove from processor, shape into a ball, wrap in plastic and chill for 3 hours or overnight.
  • Cut dough into thirds; roll each section out on floured surface into 12" round.
  • Cut each round into 8 (3") circles (using a glass works well).
  • Place about 2 tsp filling on each dough circle.
  • Moisten outer edges with water and fold dough over to close.
  • Seal edges by pressing gently with the back of a fork or pinching together with your fingers.
  • In large pot, bring salted water to boil.
  • Cook 12 pierogi at a time, reducing heat to a gentle boil; boil until pierogi float to the surface (about 5 minutes).
  • Remove with a slotted spoon, drain on paper towel and transfer to serving dish.
  • Repeat with remaining pierogi.
  • At this point you can serve them warm, freeze them for later use or fry them in butter over medium heat, lightly browning both sides before serving.

1/2 cup butter
2 tablespoons onions, chopped
1 pinch saffron
3 eggs
1/2 cup celery, chopped
4 cups bread, cubes
1 cup boiling water
1 1/2 teaspoons salt
2 cups potatoes, mashed

Steps:

  • Melt butter.
  • Add celery and onion.
  • Cook until tender.
  • Pour over bread cubes and mix well.
  • Combine saffron and boiling water.
  • Add to bread and mix well.
  • Add remaining ingredients to bread, mixing well after each addition.
  • Finished product should be very moist.
  • Add more milk if necessary.
  • Turn into 2 well greased casserole dishes.
  • Bake at 350 for 45 minutes.

2 large eggs
1/2 teaspoon salt
1 1/4 cups flour
1 1/4 cups almond meal
2 ounces cream cheese
water, as needed depends on how dry flour is you may not need any
3 -4 cups mashed cooked sweet potatoes
2 tablespoons milk, warmed
2 tablespoons butter, melted
2 tablespoons cream cheese, room temperature
1/2-1 teaspoon cinnamon
1/2 teaspoon vanilla
1 tablespoon brown sugar
1/4 teaspoon orange zest
2 1/4 tablespoons dried cranberries
1 pinch salt
black pepper
butter, for frying

Steps:

  • In a food processor with the blade and pulse flour and salt.
  • Add eggs and cream cheese run processor till crumbly about 20 seconds. Then through tube slowly add lukewarm water till dough comes into a ball. Process 6 seconds.
  • If sticky just add a little more flour.
  • Let rest 20 minutes.
  • Meanwhile mix all the filling ingredients together taste and adjust seasonings and set aside.
  • Roll half the dough on floured surface to about 1/16 inch thick.
  • Cut out 5 inch circles using a glass or cookie form.
  • Fill each circle with about 2 tablespoons of filling.
  • Fold over making sure edges are sealed and no air pockets.
  • If dough won`t seal lightly brush water on edges and pinch together.
  • Continue till all dough and filling is used up.
  • Cook in salted boiling water with a touch of olive oil.
  • Cook 10 at a time do not over-crowd.
  • Stir to avoid sticking.
  • About 3 minutes. Remove with slotted spoon and place in bowl.
  • Brown in a hot pan with butter to coat.
  • Repeat till all are cooked.

2 cups sucanat (organic) or 2 cups light brown sugar
4 large eggs (organic)
1 teaspoon vanilla extract (organic)
1 cup applesauce (organic)
1 1/2 cups sweet potato puree (organic)
3 cups flour (organic)
1/4 cup ground flax seeds (organic)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon (organic)
1/4 teaspoon nutmeg (organic)
4 ounces cream cheese, softened (organic)
cinnamon sugar (optional)

Steps:

  • Preheat oven to 350°F In the meantime, cream butter and sugar with an electric mixer. Sucanat is grainier than sugar and won't cream the same way-it'll work fine so long as the sucanat and butter are well mixed.
  • Add eggs, vanilla, applesauce and sweet potato to butter-sugar combo and mix well on low speed.
  • Combine all dry ingredients in a separate bowl. Slowly add to the wet ingredients while continuing to mix on low speed.
  • Fill each well of a greased, 1-ounce mini muffin tray half way. Add a ¼ tsp dollop of cream cheese on top of batter. Finish filling each well to the rim. Sprinkle each muffin with cinnamon sugar.
  • Bake for 18-20 minutes. Muffins are done when a toothpick inserted into the center comes out clean (except for some cream cheese filling)! Sprinkle some more cinnamon sugar on top. Allow muffins to cool in tray for about 5 minutes. Finish cooling on a baking rack.

  • Leave to cool. Then blend in egg, rice flour or plain flour, sea salt and freshly ground black pepper, to taste.
  • Gently fry onion in oil until transparent, add turmeric and fry for a further minute. Remove from heat.
  • Peel tomatoes, halve crosswise and remove seeds and juice.
  • Chop finely and place in a bowl, add onion mixture, tuna, parsley, sea salt and freshly ground black pepper to taste.
  • (During shaping moisten hands with water to prevent potato from sticking.).
  • Take about a tbs of the potato mixture and flatten it in the palm of your hand.
  • Put a tsp of the filling in the center and close potato around filling.
  • Roll into a ball and then roll in flour and flatten to make thick cakes. Arrange on a tray.
  • Add oil to frying pan to a depth of 1/4 inch (5mm). Heat well and fry potato cakes until golden brown on each side - about 3 minutes in all.
  • Drain on paper towels and serve hot on a plate with your choice of condiments.

I developed this recipe a few years ago for a friend that enjoyed Pyrahi with meat. This recipe is for baked pyrahi. I do not boil them. They freeze well after cooking.

Number Of Ingredients 8

3 large potatoes, peeled and cut into chunks
1 cup freshly grated sharp cheddar cheese
1 tablespoon extra virgin olive oil
3/4 lb lean ground beef
3/4 cup finely chopped onion
4 large garlic cloves, finely chopped
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • In a medium size saucepan, add potato chunks and cover with water. Cook until potatoes are cooked, about 15 minutes.
  • Drain well and immediately mash in the saucepan. Add grated cheese and mix until the cheese melts and is well blended.
  • In a frying pan on medium-high heat, add olive oil and lean ground beef and fry for 3 minutes, stirring often.
  • Add onions and garlic and continue to fry for an additional 3 minutes, stirring often.
  • Add beef mixture salt and pepper to the potatoes and mix until well blended.
  • Let mixture cool slightly before using to make the pyrahi.

3-4 lb russet potatoes, peeled
6-8 slice white bread, torn into coarse crumbs
1/2 c white or yellow onion, chopped
1 Tbsp fresh parsley, finely chopped
1 large egg
3 Tbsp salted butter
salt and pepper to taste
1/2 c whole milk

Steps:

  • 1. Preheat oven to 375 degrees F. Boil potatoes in salted water for 1 hour or until they can easily be pierced with a fork. Meanwhile, melt 1 tablespoon of butter, add onions, and saute until just soft, add bread crumbs and stir over heat until lightly toasted. Melt remaining butter separately, and set aside.
  • 2. Transfer potatoes to a large mixing bowl and add torn bread, onions and remaining ingredients. Whip together with a hand mixer on medium speed until mixture is almost smooth. Mixture should be a fluffy, mashed potato consistency, just a little bit more dense and rich. Transfer potato mixture to a glass 8x8" square baking dish. Drizzle remaining 2 Tablespoons butter over filling.
  • 3. Bake, uncovered, 30-35 minutes or until filling has formed a light crust. Serve.
