Kosher salt and freshly ground black pepper
3 tablespoons olive oil
6 large carrots, unpeeled, cut into 2-inch pieces
2 onions, quartered
2 heaping tablespoons tomato paste
1 cup whiskey
3 cups beef broth
2 to 3 sprigs fresh rosemary
2 to 3 sprigs fresh thyme
Mashed potatoes, for serving

MAPLE-GLAZED ROAST WITH WINTER VEGETABLES

Maple-Glazed Roast with Winter Vegetables image

Makini Howell knows a thing or two about hosting a plant-based holiday: She was raised vegan, and she has served a four-course Thanksgiving dinner at her Seattle restaurant, Plum Bistro, since it opened in 2009. Her recipes come from her family and include a smoked seitan roast developed by her late father. "I wanted to serve something that looked like a ham or turkey for that familiar feeling," she says. Assuming most people don't want to make their own seitan, Makini adapted the recipe to focus on the rich maple glaze, which you can use to dress up a store-bought roast.

Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 11

1 stick unsalted vegan butter, melted
3/4 cup Dijon mustard
1/2 cup pure maple syrup
2 tablespoons vegan Worcestershire sauce
1 tablespoon garlic powder
Sea salt and freshly ground pepper
1 1-pound plant-based roast
1/2 pound assorted winter vegetables, such as acorn squash (cut into wedges) and mushroom caps
Vegetable oil, for drizzling
2 cloves garlic, minced
Sea salt and freshly ground pepper

Steps:

  • Make the glaze: Whisk the melted butter, mustard, maple syrup, Worcestershire sauce and garlic powder in a bowl; season liberally with salt and pepper. Set the glaze aside.
  • Cook the roast: Preheat the oven to 375˚ F. Place the roast in a roasting pan or baking dish and pour the glaze on top. Cover with foil and bake 15 minutes, then remove the foil and bake 5 more minutes.
  • Meanwhile, make the vegetables: Put the vegetables on a rimmed baking sheet and drizzle with vegetable oil; add the garlic, season with salt and pepper and toss. Roast until almost fork-tender, 10 to 15 minutes. (If mixing vegetables, note that they may be done at different times.)
  • Slice the roast about 1/4 inch thick in the pan. Add the roasted vegetables to the pan with the roast. Brush everything with the glaze from the pan, cover with foil and return to the oven. Roast about 10 minutes, then remove the foil and continue roasting until the glaze starts to bubble and caramelize and the vegetables are fork-tender, about 10 more minutes.

PLAN/PURCHASE
THE ROAST
3-4 lb chuck roast
1 Tbsp olive oil, extra virgin
salt, kosher variety, to taste
black pepper, freshly ground, to taste
THE BRAISING LIQUID
1/2 c fresh clover honey
1/2 c bourbon
1 Tbsp coconut sugar (optional)
1/3 c tamari sauce
1 Tbsp worcestershire sauce
1 c beef stock, not broth

Steps:

  • 1. PREP/PREPARE
  • 2. THE ROAST
  • 3. Gather your ingredients.
  • 4. Place a rack in the lower position, and preheat the oven to 275f (135c)
  • 5. Rub the roast down with the oil, and then sprinkle with salt & pepper, to taste.
  • 6. Place a pot over medium-high heat, and sear the roast on all sides, about 2 minutes, per side.
  • 7. Remove the roast, and reserve.
  • 8. THE BRAISING LIQUID
  • 9. Gather your ingredients.
  • 10. Add the ingredients to the pot, and reduce heat to medium.
  • 11. Chef's Note: Use a wooden spoon to scrape the fonds off the bottom of the pot, and incorporate them into the braising liquid.
  • 12. Bring up to a simmer, while stirring to incorporate all the ingredients.
  • 13. Chef's Tip: Since this braising liquid contains a lot of bourbon, when it comes to a simmer, you might want to avoid the fumes... unless you want to get drunk.
  • 14. Return the roast to the pot.
  • 15. Tightly cover and place in the oven until fork tender, about 4 hours.
  • 16. Chef's Note: If you are doing this in a slow cooker, add the seared roast, and other ingredients to the bowl of your slow cooker, and then set on low for 8 or 9 hours.
  • 17. PLATE/PRESENT
  • 18. Remove from the pot (or slow cooker), thickly slice, then plate with your favorite veggie and/or starch, and drizzle on some of that yummy sauce. Enjoy.
  • 19. Keep the faith, and keep cooking.

Tips:

  • Use a Dutch oven or large pot with a tight-fitting lid for even cooking.
  • Sear the beef roast on all sides before braising to develop flavor.
  • Add vegetables such as carrots, celery, and onions to the pot for a more flavorful broth.
  • Use a low-sodium beef broth to control the saltiness of the dish.
  • Add herbs and spices such as thyme, rosemary, and garlic to enhance the flavor of the roast.
  • Simmer the roast on low heat for at least 2 hours, or until the meat is fall-apart tender.
  • Make the bourbon maple glaze while the roast is cooking, so it has time to thicken and caramelize.
  • Baste the roast with the glaze during the last 30 minutes of cooking to add flavor and color.
  • Serve the pot roast with mashed potatoes, roasted vegetables, or a side salad.

Conclusion:

This pot roast with bourbon maple glaze is a delicious and easy-to-make meal that is perfect for a special occasion or a weeknight dinner. The combination of savory beef, sweet and tangy glaze, and tender vegetables makes this dish a surefire hit. With a little planning and preparation, you can create a restaurant-quality meal in the comfort of your own home.
