2 tablespoons (2 turns around the pan) extra-virgin olive oil
3 medium white waxy potatoes, like yukon golds, peeled and diced
2 medium onions, chopped
4 to 6 cloves garlic, chopped
2 bay leaves, fresh or dried
1 pound kale, coarsely chopped
Coarse salt and pepper
1 (15-ounce) can garbanzos (chick peas), drained and rinsed
1 can diced tomatoes
1 pound diced chourico, casing removed
1 quart chicken broth
Warm, crusty bread

Steps:

  • Heat oil in a deep pot over medium high heat. Add potatoes and onions, cover and cook 5 minutes, stirring occasionally.
  • Add garlic, bay leaves, and kale to the pot. Cover pot and wilt greens 2 minutes. Season with salt and pepper. Add beans, tomatoes, chourico, and broth to the pot and bring soup to a full boil. Reduce heat back to medium and cook 5 to 10 minutes longer or until potatoes are tender.

1/2 pound chouriço or linguiça (smoked Portuguese sausages) or kielbasa, cut into 1/2-inch pieces
1 medium onion, chopped
2 garlic cloves, minced
1 pound russet (baking) potatoes, peeled and cut into 1-inch pieces
6 cups water
1 pound kale, stems and center ribs discarded and leaves very thinly sliced
Accompaniment: piri-piri sauce or other hot sauce

Steps:

  • Heat 1 tablespoon oil in a 5-quart heavy pot over medium-high heat until it shimmers, then brown sausage, stirring often, 2 to 3 minutes. Transfer with a slotted spoon to a bowl. Add 2 tablespoon oil to fat in pot and cook onion and garlic with 1/4 teaspoon each of salt and pepper over medium heat, stirring often, until browned, 7 to 8 minutes.
  • Add potatoes, water, and 1 teaspoon salt and simmer, covered, until potatoes are very tender, 15 to 20 minutes. Mash some potatoes into soup to thicken, then add kale and simmer, uncovered, until tender, about 5 minutes. Stir in sausage and cook until just heated through, 1 to 2 minutes. 1 cup water
1 (15 ounce) can red kidney beans, drained and rinsed

Steps:

  • Heat olive oil in a stock pot over medium heat. Cook and stir onion and garlic in the hot oil until fragrant, about 1 minute. Add kielbasa; cook and stir until browned, about 5 minutes. ½ pound dried white pea beans
½ pound chorizo sausage, thinly sliced
1 pound beef soup bones
1 quart water
1 medium head cabbage, chopped
2 bunches kale - rinsed, dried and chopped
5 potatoes, peeled and cubed
1 quart hot water or as needed
salt and pepper to taste

Steps:

  • Soak beans in twice their volume of water 8 hours or overnight.
  • In a large pot, place drained beans, chorizo, soup bones and 1 quart water (or more as needed to cover). Cook over medium heat until beans are just beginning to be tender, 1 hour.
  • Stir in cabbage, kale, potatoes and enough hot water to cover. Cook until potatoes are tender, 20 minutes. Season with salt and pepper.

This is a very flavorful soup that is a comfort food for my family. The recipe was given to me by my Portuguese mil over 30 yrs ago. Her mother had passed it on to her. This soup is easily stretched to make more servings. The Chorizo gives the broth a good base for adding another can of beans or more pasta or a little water. Soul warming for a cold night, serve with a warm crusty bread. A great next day soup. Freezes well.

1 tablespoon olive oil
1 lb chorizo sausage (fresh not dried)
1 quart chicken broth
1 large onion, roughly diced
4 large potatoes, cubed
1 bunch kale, stemmed washed & chopped (abt. 1 lb.)
1 1/2 cups ditalini
1 (15 ounce) can dark red kidney beans
fresh ground black pepper
salt (optional)

Steps:

  • Remove casing from sausage and cut into smaller than bit sized pieces.
  • Heat oil in a heavy soup pot; saute the sausage& onion just until the fat is rendered, about 3 to 5 minutes.
  • Drain on paper towels.
  • Add other ingredients except kale,& pasta.
  • Bring to boil and simmer 10 minutes.
  • Add kale, and pasta and simmer about 8 minutes until both are tender.

1 large onion, finely chopped (about 2 cups)
4 cloves garlic, finely chopped
2 1/2 pounds russet potatoes (about 5 potatoes), peeled and cut into 1-inch cubes
8 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
8 ounces chorizo sausage, halved lengthwise
3/4 pounds kale, stems removed, very thinly sliced
Coarse salt and freshly ground pepper

Steps:

  • Heat oil in a large stockpot over medium-high heat; add onion and garlic. Cook, stirring occasionally until translucent, about 4 minutes. Add potatoes and chicken stock. Bring to a boil, reduce to a simmer, and cook until potatoes are very soft, about 15 minutes.
  • Remove soup from heat, and puree with an immersion blender. Return to heat; add kale, and simmer for 5 minutes.
  • In a medium skillet over medium heat, cook chorizo until the fat renders and the sausage turns golden brown, about 3 to 4 minutes per side. 1/2 head green cabbage
6 -8 cups chicken stock or 6 -8 cups canned reduced-sodium chicken broth
1 lb linguica sausage, sliced 1/4 inch thick
1 lb red potatoes, diced
2 (15 1/4 ounce) cans dark red kidney beans
1 (14 1/2 ounce) can diced tomatoes
1 medium onion, chopped
3 garlic cloves, minced
2 teaspoons crushed red pepper flakes
3 bay leaves
1/8 teaspoon Hungarian paprika
1 -2 tablespoon olive oil
coarse salt
fresh ground black pepper

Steps:

  • Wash kale under running water.
  • Strip from tough stem, coarse chop and set aside.
  • In the food processor, using the medium shredder blade, shred cabbage, drain and rinse beans.
  • Heat the olive oil in a large stock pot, add sausage, chopped onion and minced garlic.
  • Cook, stirring occasionally until the onion is transparent.
  • Add remaining ingredients, bring to a boil, reduce heat and simmer for about 45 minutes to 1 hour.

Steps:

  • In a kettle cook the garlic, the onions, and the carrot in the oil over moderately low heat, stirring, until the vegetables are softened. Add the russet potatoes, peeled and cut into 1-inch pieces, the broth, and 4 cups water, bring the liquid to a boil, and simmer the mixture, covered, for 10 to 15 minutes, or until the potatoes are tender. While the potatoes are cooking, in a skillet cook the chorizo over moderate heat, stirring, until it is browned lightly and transfer it with a slotted spoon to paper towels to drain. 5 (13 1/2 ounce) cans beef broth
2 cups water
1 lb kale (broken up into small pieces or shredded)
1 large onion, diced coarsely
1/2 lb chorizo sausage, skinned and broken up
1 lb linguica sausage, sliced into chunks
1 tablespoon red wine vinegar or 1 tablespoon balsamic vinegar
1 teaspoon pepper
1/2 teaspoon salt, broth is very salty, as is sausage (optional)
1 -2 cup water (as needed while cooking)
2 cups cubed potatoes

Steps:

1 tablespoon finely chopped garlic
1/2 cup diced onion
1/2 diced turnip
1/2 cup diced carrot
1 bunch kale, stemmed and roughly chopped
6 ounces soy chorizo, chopped (vegetarian chorizo)
3 bay leaves
3 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh thyme leaves
6 cups vegetable stock
1 cup kidney bean
3/4 cup diced tomato (6 ounces)
10 ounces diced potatoes (about 2 medium)

Steps:

  • In a large stock pot, heat the olive oil over medium-high heat. Add the garlic, onions, turnips and carrots and cook for 5 minutes. Add the kale, chorizo, bay leaves, parsley and thyme and mix well. Add the veg. stock, beans and tomatoes. Bring the soup to a boil, and then reduce the heat to low and simmer for 30 to 40 minutes.
  • Meanwhile, in a medium saucepan, bring the salted water to a boil and add the diced potatoes. Cook until tender, about 10 minutes. Drain the potatoes and add them to the soup.

1 lb Portuguese chourico (can use turkey chourico) or 1 lb turkey sausage (I like to use chourico dogs)
1 lb kale, stems removed, leaves shredded
1 teaspoon olive oil
1 onion, chopped
4 garlic cloves, chopped
6 cups fat free chicken broth
4 small boiling potatoes, peeled diced into 1/4 inch pieces
1 pinch dried red pepper flakes
salt, if needed
1/4 teaspoon fresh ground pepper

Steps:

  • In a large pot, cook chourico or sausage over low heat. Turn and cook until brown, about 10 minutes. Remove from pot and let cool. Cut sausage into slices. Remove any fat from pot, but leave the cooked on bits.
  • Add oil to pot, add onion and cook on medium until translucent, about 5 minutes. Add garlic and cook 1 minute more. As you stir, scrape up the bits from the bottom of the pan.
  • Add broth potatoes, and black pepper, bring to a boil and cook 20 minutes. Remove the pot from heat and either lightly mash the potatoes with a potato masher or food processor, or I like to use my immersion blender to puree the entire mixture.
  • Add chourico or sausage, red pepper flakes and bring back to a simmer. Cook covered for about 4 minutes. Add kale and bring back to a simmer. Cook partially covered until the kale is cooked. Adjust salt if needed.

4 cups chicken broth
2 tablespoons EVOO, for sautéing
1 yellow onion, chopped
2 cloves fresh garlic, minced
2 waxy potatoes, chopped into 1 (2.54 cm) in cubes
1 can light red kidney, drained
1 can navy beans, drained
2 bunches kale, stems removed and torn into smaller pieces
2 bay leaves
salt and pepper, to taste

Steps:

  • In a large soup pot in olive oil, saute the sausage on medium heat until browning and fragrant. Set meat aside.
  • In the same pot, refresh olive oil and add in onions and saute until translucent. Once cooked, add in garlic and add the sausage in to combine.

1 tablespoon olive oil
1 tablespoon finely chopped garlic
1/2 cup diced onions
1/2 diced turnips
1/2 cup diced carrots
1 bunch kale, stemmed and roughly chopped
6 ounces chopped chourico (spicy Portuguese sausage), or chorizo
3 bay leaves
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh thyme leaves
6 cups beef stock
1 cup kidney beans
6 ounces diced tomatoes
10 ounces diced potatoes

Steps:

  • In a large stock pot, heat the oil over medium-high heat. Add the garlic, onions, turnips and carrots and cook for 5 minutes. Add the kale, chourico, bay leaves, parsley and thyme and mix well. Add the beef stock, beans and tomatoes. Bring the soup to a boil, and then reduce the heat to low and simmer for 30 to 40 minutes.
  • Meanwhile, in a medium saucepan, bring salted water to a boil and add the diced potatoes. Cook until tender, about 10 minutes. Drain the potatoes and add them to the soup.
  • Remove the bay leaves and serve hot.

My grandmother (from Fall River Massachusettes) taught me to make this soup just before I went to college. I tweaked it a little, but not much. This is portuguese soul food. It cures all ills, especially the rainy cabin fever I get here in Seattle each winter. Note: 12.02.07 I stopped eating meat, but still love to make this soup. Vegetarians... use "Soyrizo" instead of Chourice.

3 large potatoes, peeled then chopped coarsely
2 large white onions or 2 large yellow onions, one chopped coarsely the other finely
400 ml dry sherry (this is half a bottle but the Zaar wanted clear measurements) or 400 ml white wine (this is half a bottle but the Zaar wanted clear measurements)
10 cups fresh kale, leaves and stems chopped finely
1 apple, washed chopped in half, and de-seeded
1/2-3/4 cup minced fresh garlic clove
3/4 lb Portuguese chourico (or chorizo, the mexican version, if you like) or 3/4 lb soy chorizo
1 (28 ounce) can diced tomatoes with juice
1 (12 ounce) can great northern beans (white, kidneys or pintos would do fine too)
1 lemon
2 -3 bay leaves
kosher salt
black pepper
hot sauce (I prefer Tabasco)
turmeric
thyme

Steps:

  • Dump the potatoes in a big old stock pot with the garlic, the wine and about a gallon of water or stock, about a tbs of salt, a few dashes of hot sauce, the two apple halves and the bay leaves.
  • Heat on medium with a lid.
  • While the potatoes soften, simmer the chourico in a smallish sauce pan.
  • Add a little olive oil if it's really lean sausage.
  • Cover it and simmer on low (you want to save all the savory, spicey yumminess to stay right there in the pan!) When the potatoes are good and soft, mash them.
  • (I take the apples out-- they should be floating -- for a sweeter soup, leave them in, but take the peels off.) I mash them right there in the stock pot, but some people like to strain them out, smash'em and then put them back inches.
  • Whatever you do,*don't* dump out all of the wonderful broth the potatoes have created for you.
  • Don't smash them entirely if you like a nice chunky soup.
  • When the chourico is all cooked (I tell by the consistency.) put the onions in the pan and put the lid back on.
  • Turn off the heat, and let the onions start to wilt in the pan.
  • Let the potato broth simmer without a lid for about 1/2 hour.
  • Taste it.
  • Adjust salt/pepper.
  • Take out the Bay Leaves Add the Kale, the Chourico/Onion mixture, the thyme, turmeric (about 1 tsp each), the tomatoes and the beans.
  • Let it simmer with the lid off for about 1/2 hour.
  • Taste it, adjust it.
  • Add the juice of about the 1/4 of the lemon.
  • Continue to simmer and taste for about 1 hour or so adjusting lemon, spices, salt, and hot sauce.
  • Serve with some crusty bread, and parmesean cheese to put on top.

VEGAN PORTUGUESE KALE SOUP

4 vegan burger patties
1 tablespoon vegetable oil, or as needed
1 small onion, diced, or more to taste
3 cloves garlic, minced
½ teaspoon ground chipotle pepper, or to taste
salt and ground black pepper to taste
10 cups vegetable stock, divided
1 (6 ounce) can tomato paste
1 (26 ounce) can whole plum tomatoes with juice, or to taste
½ teaspoon adobo seasoning
½ teaspoon sazon seasoning
2 pounds potatoes, cut into bite-sized cubes
2 cups chopped kale, or to taste

Steps:

  • Heat 2 teaspoons oil in a skillet over medium heat. Add vegan burger patties; cook, flipping halfway, until browned, about 6 minutes. Transfer to a plate and cut into bite-sized cubes.
  • Heat remaining oil in a pot over medium-high heat. Add onion, garlic, chipotle pepper, salt, and pepper. Saute until onion is translucent, about 5 minutes. Add 1 cup vegetable stock and tomato paste; bring to a simmer. Add the browned vegan patties and plum tomatoes with juice.
  • Pour remaining vegetable stock into the tomato mixture. Sprinkle in adobo seasoning and sazon. Bring to a boil. Add potatoes and kale; cook until potatoes are tender, 10 to 15 minutes.

2 Tbsp (2 turns around the pan) extra-virgin olive oil
3 medium white waxy potatoes, like yukon golds, peeled and diced
2 medium onions, chopped
4-6 clove garlic, chopped
2 bay leaves, fresh or dried
1 lb kale, coarsely chopped
coarse salt and pepper
1 can(s) (15-ounce) garbanzos (chick peas), drained and rinsed
1 can(s) diced tomatoes
1 lb diced chourico, casing removed
1 qt chicken broth
warm, crusty bread

Steps:

  • 1. Heat oil in a deep pot over medium high heat. Add potatoes and onions, cover and cook 5 minutes, stirring occasionally.
  • 2. Add garlic, bay leaves, and kale to the pot. Cover pot and wilt greens 2 minutes. Season with salt and pepper. Add beans, tomatoes, chourico, and broth to the pot and bring soup to a full boil. Reduce heat back to medium and cook 5 to 10 minutes longer or until potatoes are tender.
  • 3. Serve soup with hunks of crusty bread and butter.

2 8 inch linguica links
2 8 inch chourico links
4 Tbsp light cooking oil
5 c beef broth
4 clove garlic, minced
1 small yellow onion, minced
7 c fresh kale, chopped and rinsed
3 c dried navy beans
5 c potatoes, peeled and cubed
4 c warm water
1/4 tsp red pepper flakes
1 tsp marjoram, dried
3 bayleaves, whole
3/4 tsp paprika, sweet mild
salt and pepper to taste

Steps:

  • 1. 1-In a small sauce pan bring your navy beans to a boil in 6 cups of water. Once it hits a boil, let sit off of heat in the water for 1 hour. 2-Drain from water and set navy beans aside. 3-In a large dutch oven or cooking pot, add light oil and heat through on medium high. 4-Once oil is at smoking temperature add linguica and chourico. Brown them on all sides with the pan covered. 5-Once sausages are browned completely, remove from heat and de-glaze your pan with the drippings left behind from the sausages. Set sausages aside. 6-Add your garlic and onions to the pan. Cook with pan covered. 7-Once garlic and onion are translucent, add in your broth. 8-Add bay leafs to broth. Simmer for 30 minutes. Bring to a boil and add your navy beans. Bring back to simmer for 1 hour. 9-Add salt, pepper, marjoram, red pepper flakes, and paprika. Continue to simmer for another half hour. 10-Add warm water. 11-Add kale to your broth and simmer for 2 hours. 12-Slice your sausages up into half inch pieces. Add them to the soup. 13-Add potatoes to the soup. Continue to simmer until potatoes are tender and kale is wilted completely. This could take another 1 or 2 hours. 14-Lower heat and let soup sit on low for about an hour before serving. (Letting it come down from simmer slow like this before serving really brings all the flavors out and lets them develop nice.)

I was jonesing for a good soup, and my daughter (who is a classically trained chef btw) concocted this recipe. Don't be intimidated by the length of ingredients - most of these items are probably lying around your kitchen already! A great hearty soup.

2 Tbsp vegetable oil
1 medium onion, chopped
10 clove garlic, crushed
1 1/2 tsp thyme, dried
1/2 tsp crushed red pepper
8 oz dry-aged spanish chorizo, cut into bite-sized pieces
1/4 c white wine
3 Tbsp flour
1 bunch lacinato kale, chopped
8 c chicken broth
4 c water
1 bay leaf
4 medium potatoes, diced
salt to taste

Steps:

  • 1. Cook onions and garlic in oil over medium heat until translucent in a soup pot.
  • 2. Add thyme and red pepper. Let flavors infuse for a minute, then add the chorizo; cook for 4 minutes.
  • 3. Deglaze with the white wine. Add flour to soak up excess fat from the chorizo; add the kale.
  • 4. Pour chicken broth and water into the pot with the bay leaf; stir and then toss in the potatoes.
  • 5. Add salt to taste.
  • 6. When the potatoes are done, the soup is done.
  • 7. Happy eating!

Tips:

  • Use fresh kale for the best flavor and texture. If you can't find fresh kale, you can use frozen kale, but be sure to thaw it completely before using.
  • To remove the tough stems from the kale, hold the leaves by the base and run a knife along the stem. The leaves will easily fall off.
  • You can use any type of sausage in this soup, but Portuguese sausage is a traditional choice. If you can't find Portuguese sausage, you can use another type of smoked sausage, such as chorizo or kielbasa.
  • Be sure to brown the sausage and onions before adding them to the soup. This will help to develop their flavor.
