2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of salt
Cooking spray
1 stick butter, melted

1 cup chopped candied macadamia nuts
1/4 cup coconut pancake syrup

Fruity or coconut syrup for topping if desired.

Steps:

  • Slice sweet bread into about 20 slices, 1" thick. Liberally spray a 9" x 13" baking dish with cooking spray and arrange bread slices in 2 rows overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg, and salt, and beat with a rotary beater or whisk until blended (but not too bubbly). Pour mixture over the bread slices, making sure they're evenly covered (get the mixture in between the slices with a spoon). Cover and refrigerate overnight. The next morning, preheat oven to 350º F. Combine all the ingredients for the topping and spread evenly over the top of the bread. Bake for 40 minutes, until puffed and lightly golden. Serve with coconut pancake syrup (I use homemade pear or blackberry)But most of us didn't use the syrup at all!).

PORTUGUESE BREAD FRENCH TOAST

One of the best uses for Portuguese bread is in baked French toast. Because the bread is so light it soaks up a lot of the batter and becomes too fragile to pan-fry. So...baking is the answer. Serve the French toast with maple syrup.

Tips:

  • Use stale bread: Stale bread absorbs more egg mixture, resulting in a richer, more flavorful French toast. If you don't have stale bread, you can toast fresh bread slices in the oven at 200°F for 10 minutes before using.
  • Don't overcrowd the pan: Cook the French toast in batches if necessary to avoid overcrowding the pan. This will help the bread cook evenly and prevent it from becoming soggy.
  • Use a non-stick skillet: A non-stick skillet will help prevent the French toast from sticking and tearing. If you don't have a non-stick skillet, you can grease a regular skillet with butter or cooking spray.
  • Cook the French toast over medium heat: Cooking the French toast over medium heat will help it cook evenly without burning. If the heat is too high, the outside of the bread will burn before the inside is cooked through.
  • Flip the French toast once: Only flip the French toast once during cooking. Flipping it too often will break up the bread and make it difficult to cook evenly.
  • Serve the French toast immediately: French toast is best served immediately after it is cooked. If you need to keep it warm, place it in a 200°F oven for up to 15 minutes.

Conclusion:

Portuguese French toast is a delicious and easy-to-make breakfast or brunch dish. By following these tips, you can make perfect French toast every time. Serve it with your favorite toppings, such as butter, syrup, fruit, or whipped cream, and enjoy!
