6 garlic cloves, minced
2 jalapenos, seeded & minced
1/4 cup red wine vinegar
1/2 cup finely chopped fresh flat-leaf parsley
1/2 cup finely chopped fresh oregano
3 limes, juice of
1 cup olive oil
1 teaspoon kosher salt
1 teaspoon whole black peppercorn
2 (1 lb) pork tenderloin, trimmed of excess fat & patted dry (about 1 pound each)
kosher salt & freshly ground black pepper
extra virgin olive oil
lime juice, for drizzling

Steps:

  • Combine the garlic, jalapeno, vinegar, parsley, oregano & lime juice in a bowl.
  • Whisk in the olive oil & season with salt and pepper. Mix well & set aside at room temperature to marry.

2 teaspoons extra-virgin olive oil, divided
2 tablespoons shallot, minced
1 garlic clove, minced
10 ounces baby spinach, rinsed but not dried
1 small red bell pepper, roasted, seeded and diced (3/4 cup)
1/4 cup Parmesan cheese, grated
3 tablespoons Italian-seasoned breadcrumbs, dry
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
1 cup packed coarsely chopped fresh flat-leaf parsley, including tender stems
1/4 cup water
2 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons onion, finely chopped
1 teaspoon dried oregano
1 garlic clove, finely chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon hot pepper flakes

  • To make chimichurri: Process all ingredients together in blender, occasionally stopping to scrape down sides, until smooth. Transfer chimichurri to a serving bowl, set aside (makes about 1/2 cup chimichurri). To make pork: Butterfly pork, cutting tenderloin lengthwise, stopping about a quarter inch from the bottom. Open pork, make a lengthwise cut on each meaty side, and open again so pork is about 5 inches wide. Heat 1 teaspoon oil in medium nonstick skillet over medium heat. Add shallot and garlic and cook until shallot softens, about 1 minute. A handful at a time, stir in spinach, letting each batch wilt. Cook, stirring occasionally, until spinach is tender, about 3 minutes. Drain in sieve and let cool until easy to handle. Press hard on spinach mixture with spoon to remove excess liquid. Transfer to bowl and stir in bell pepper, cheese, breadcrumbs, 1/4 teaspoon of salt and 1/8 teaspoon of pepper. Spread filling on pork. PORK TENDERLOIN
2 pork tenderloins (approx. 1 lb. each)
kosher salt

Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1/2 lime, juiced
2 tablespoons extra-virgin olive oil
1 (1-inch) piece fresh ginger, peeled and chopped
2 garlic cloves, chopped
1 lemongrass stalk, white part only, chopped into small pieces
1 fresh red jalapeno, cut into rounds
1 (14-ounce) can unsweetened coconut milk
1 teaspoon sugar
1 lime, juiced
1 tablespoon fish sauce (recommended: Nam pla)
Kosher salt and freshly ground black pepper
Stems from 1/4 bunch fresh cilantro
Chile-Coconut Tomato Salad, recipe follows
1 1/2 cups shredded, unsweetened coconut
2 pounds fresh heirloom tomatoes, cut into big chunks (variety of colors purple, yellow, bright red)
1/2 small red onion, slivered
1 fresh red jalapeno, thinly sliced
Leaves from 1/4 bunch fresh cilantro
Kosher salt and freshly ground black pepper
Handful fresh mint leaves
Extra-virgin olive oil
2 scallions, trimmed and chopped

Steps:

  • Put the pork on a platter and sprinkle all over with salt and pepper. Add the olive oil and lime juice and turn to coat the pork with the marinade. Cover with plastic wrap and set aside in the refrigerator.
  • For the Chile-Coconut Sauce:
  • Heat the olive oil in a saucepan over medium heat. Add the ginger, garlic, lemongrass and chile and cook to soften, about 3 minutes. Add the coconut milk, and sugar and simmer until thickened, about 5 minutes. Stir in the lime juice and season with fish sauce, and salt and pepper. Cool to room temperature. Add cilantro stems and puree using an immersion blender or blender.
  • Preheat an outdoor gas or charcoal grill. Blot some oil onto a thick square of paper towel and then carefully and quickly wipe the hot grates of the grill to make a non-stick surface. Put the pork on the grill and cook, turning to brown all sides, until crusty on the outside and almost cooked through but still slightly pink in the center, 10 to 15 minutes.
  • Remove from the grill and let rest for a few minutes.
  • To serve, slice the pork and add it to the bowl with the tomato salad. Pour over the chile-coconut sauce and toss it all together.
  • Preheat the oven to 375 degrees F.

2 pork tenderloins, cleaned of any silver skin or sinew
1/2 cup olive oil, plus more for brushing on pork
Kosher salt and freshly cracked black pepper
2 bunches scallions
1/4 to 1/2 cup sherry vinegar
2 tablespoons finely minced chives
2 tablespoons finely minced fresh parsley
2 tablespoons finely minced shallots
1 teaspoon finely minced garlic
1/4 cup whole-grain mustard

Steps:

  • Preheat a grill or grill pan to medium-high heat. Preheat the oven to 450 degrees F.
  • Brush the pork tenderloins with a little olive oil and sprinkle with salt and pepper. Grill until well-marked on all sides, about 8 minutes total.

2 lbs lean pork loin, fat removed
6 garlic cloves, minced
2 jalapenos, minced
1/4 cup red wine vinegar
1/2 cup parsley
1/2 cup oregano
1 cup extra virgin olive oil
1 teaspoon kosher salt
1 teaspoon peppercorn
3 limes, juice of

Steps:

  • Mix garlic with jalapeños, vinegar, herbs and lime juice.
  • Whisk in the olive oil.
