HERBED PORK TENDERLOINS
Steps:
- Preheat the oven to 450 degrees F.
- Place the tenderloins on a sheet pan and pat them dry with paper towels. Combine the rosemary, thyme, 1 tablespoon salt, and 1 teaspoon pepper in a small bowl. Rub the tenderloins all over with 2 tablespoons of olive oil. Sprinkle all sides with the herb mixture. If there is a thinner "tail," fold it underneath so the tenderloin is an even thickness throughout. Wrap the tenderloins completely with a single layer of prosciutto. (I place the prosciutto sideways with the ends wrapping under the tenderloins.) Tie in several places with kitchen string to hold the prosciutto and the "tail" in place.
- Roast for 20 to 25 minutes, until an instant-read thermometer inserted in the middle of the end of the tenderloin reads 140 degrees F for medium rare and 145 degrees F for medium. Cover the tenderloins tightly with aluminum foil and allow to rest at room temperature for 15 minutes. Slice diagonally in thick slices and serve warm with apple chutney.

PORK ROAST - ROSEMARY AND THYME
Steps:
- 1 Heat oven to 450 degrees F. 2 Mix together garlic, chopped fresh rosemary, grated lemon rind, salt, pepper, dried thyme, lemon juice and half the oil in a small bowl. Using your hands, rub the seasoning mixture over the top and sides of pork. 3 Spoon remaining olive oil into flame-proof roasting pan; spread evenly over bottom of pan. Place pork in pan. 4 Roast pork in 450 degrees F oven for 30 minutes. Lower oven temperature to 350 degrees F. Roast for 30 minutes or until instant-read meat thermometer inserted in center registers 160 degrees F. Remove pork from pan to cutting board. Let rest 15 minutes. 5 Gravy: Pour off all but 2 tablespoons fat from roasting pan. Sprinkle flour evenly over drippings in pan. Place pan over medium-high heat; cook for 1 minute, scrapping up browned bits from bottom of pan. Stir in broth mixture; cook, stirring, for 5 minutes or until thickened. Strain gravy through fine-mesh sieve. Pour into a sauceboat and serve with sliced pork
Tips:
- To ensure your pork roast is cooked evenly, use a meat thermometer to check the internal temperature. It should reach 145°F (63°C) for medium-rare, 155°F (68°C) for medium, or 165°F (74°C) for well done.
- For a more flavorful roast, brine the pork for several hours or overnight before cooking. This will help to tenderize the meat and infuse it with flavor.
- If you don't have time to brine the pork, you can still add flavor by rubbing it with a mixture of herbs and spices before roasting.
- Don't overcrowd the roasting pan. If the pork is too crowded, it will not cook evenly.
- Roast the pork uncovered for the majority of the cooking time. This will help to create a crispy, flavorful crust.
- Let the pork rest for 10-15 minutes before carving. This will help the juices to redistribute throughout the meat, resulting in a more tender and flavorful roast.
Conclusion:
Pork roast with rosemary and thyme is a classic dish that is perfect for a special occasion or a weeknight meal. It is easy to make and can be tailored to your own taste preferences. With a little planning and preparation, you can create a delicious and memorable pork roast that your family and friends will love.
