**Pork and Beans Chili: A Hearty and Flavorful One-Pot Meal**
Pork and beans chili is a hearty and flavorful one-pot meal that is perfect for a cold winter day. This classic comfort food is made with ground pork, beans, tomatoes, and a variety of spices. It is typically served with cornbread, crackers, or rice. There are many different recipes for pork and beans chili, but they all share a few common ingredients and steps. The most important ingredient in pork and beans chili is the ground pork. Lean ground pork is the best choice for this dish, as it will not produce too much grease. Ground beef or turkey can also be used, but they will not have the same flavor as pork. The next most important ingredient is the beans. Any type of beans can be used, but pinto beans, black beans, and kidney beans are the most common. The beans should be rinsed and sorted before they are added to the chili. The tomatoes are also an important ingredient in pork and beans chili. They can be used fresh, canned, or diced. The spices that are used in pork and beans chili vary from recipe to recipe, but some common spices include chili powder, cumin, garlic powder, and onion powder. The chili is typically simmered for at least 30 minutes, but it can be simmered for longer if desired. The longer the chili simmers, the more flavorful it will be. Pork and beans chili can be served with a variety of toppings, including cheese, sour cream, and onions.
BOLD BEAN AND PORK CHILI
This tempting chili is big on flavor and really very simple to prepare. Sometimes on a Sunday, I'll get a good start on it-up to where it's time to add the beans. Then the next day, I'll take it out of the fridge and finish it off in just a few minutes. Viola-dinner is quickly served! -Natercia Yailaian Somerville, Massachusetts

Steps:
- In large heavy-bottomed Dutch oven, cook the bacon over medium heat until lightly crisp, stirring occasionally. Once the bacon is browned, add the garlic, onions, bell peppers, chili powder, cumin, chipotle chili powder, oregano, and smoked paprika and season with salt and pepper, to taste. Cook until the vegetables are tender and seasonings are aromatic. Add the beef and break it up with a wooden spoon. Once beef is broken up and beginning to brown, add the pork. Break up with wooden spoon like the beef, and brown, until no longer pink, roughly 4 minutes. Stir in the beer and beans. Toss together, then add the crushed and diced tomatoes. Turn the heat down to low and simmer for 1 1/2 hours. Taste for seasoning and add salt and pepper, if necessary. Transfer the chili to serving bowls and garnish with lime wedges, sour cream, shredded cheese, and sliced scallions.

PORK MIXED BEAN CHILI
I am posting this because I don't want to forget this!!! It used up the leftover pork roast and everyone liked it even better than the original meal...go figure. :) I made it again later with leftover pork tenderloin, too. It's great with corn tortillas or cornbread. Best of all it was quick and easy and my four year old spice-o-phobic liked it. The can sizes I guessed; they're just the standard size. This froze beautifully, too. And it is six GENEROUS servings.

Tips:
- Use high-quality ingredients: This means using fresh vegetables, lean pork, and flavorful spices. Boneless, skinless pork shoulder or pork loin are both good choices for this chili recipe.
- Brown the pork before adding it to the chili: This will help to develop its flavor and prevent it from becoming tough. Ground pork or leftover pulled pork can also be used in this recipe.
- Use a variety of beans: This will add texture and flavor to your chili. Canned beans can be used for convenience, but dried beans that have been soaked and cooked are also a good option and may have better flavor.
- Season the chili to taste: Be sure to taste the chili at various stages of the cooking process and adjust the seasoning as needed. Common seasonings for chili include chili powder, cumin, paprika, oregano, and salt and pepper.
- Let the chili simmer for at least 30 minutes: This will allow the flavors to develop and meld together. Feel free to simmer longer for an even more flavorful chili.
- Serve with your favorite toppings: Some popular toppings for chili include shredded cheese, sour cream, diced onions, and chopped cilantro.
