Tips:

- To ensure the pork medallions are cooked evenly, make sure they are all of a similar thickness. If they are not, the thinner ones will overcook while the thicker ones are still undercooked. - Use a good quality balsamic vinegar for the best flavor. A cheap balsamic vinegar will not have the same depth of flavor and will not be as thick and syrupy. - If you don't have capers on hand, you can substitute green olives or sun-dried tomatoes. - Serve the pork medallions immediately after cooking, while they are still hot and juicy.

Conclusion:

Pork medallions with balsamic vinegar and capers is a classic dish that is easy to make and always impresses. The combination of the sweet and tangy balsamic vinegar, the salty capers, and the tender pork is simply delicious. This dish is perfect for a special occasion dinner or a weeknight meal. Serve it with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.
