PORK TENDERLOIN AND MUSTARD-WINE SAUCE

Pork Tenderloin and Mustard-Wine Sauce image

The mustard-wine mixture reduces while the pork roasts, forming a simple pan sauce to drizzle over the meat.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 40m

Number Of Ingredients 6

1/2 cup dry white wine
1/2 cup water
2 tablespoons Dijon mustard
1 pork tenderloin (about 1 pound)
Coarse salt and freshly ground pepper
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 450 degrees. Whisk together wine, water, andmustard. Season pork on all sides with salt and pepper.
  • Heat a 12-inch ovenproof saute pan over medium-highheat; add oil. Sear pork until browned on all sides, about 6minutes total. Remove from heat. Carefully add mustard-winemixture. Transfer pan to oven.
  • Roast pork, spooning sauce over meat about halfwaythrough, until an instant-read thermometer inserted intothickest part of meat registers 145 degrees, about 15 minutes. Let pork rest for 10 minutes before slicing. Drizzle with sauce.

Tips:

  • To ensure the pork loin is cooked evenly, use a meat thermometer to check the internal temperature. It should read 145°F (63°C) for medium-rare or 155°F (68°C) for medium.
  • If you don't have a meat thermometer, you can check the doneness of the pork loin by cutting into it. The meat should be pink in the center but not bloody.
  • Let the pork loin rest for 10 minutes before slicing and serving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.
  • You can use any type of wine for the sauce, but a dry white wine or a light red wine is a good choice.
  • If you don't have white wine, you can substitute chicken broth or apple cider.
  • You can also add other ingredients to the sauce, such as mushrooms, onions, or garlic.
  • Serve the pork loin with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.

Conclusion:

Pork loin with wine sauce is a delicious and easy-to-make dish that is perfect for any occasion. The pork is tender and juicy, and the sauce is rich and flavorful. With just a few simple ingredients, you can create a meal that your family and friends will love.
