QUICK SAVORY CRANBERRY GLAZED PORK LOIN ROAST

Quick Savory Cranberry Glazed Pork Loin Roast image

This simple, 1-hour roast is our favorite Christmas dish and voted most likely to be served if the President were to drop in for dinner- LOL! I love serving this entree because it causes me NO stress and everyone raves over it. While the pork is roasting, make another batch of the cranberry glaze to serve in a gravy boat alongside the sliced pork roast. For food safety, the new batch should not be prepared in same pan as the first if you have been basting directly out of the saucepan. If you basted out of another dish, you can use the same pan.

Meet the Cook: Many pork recipes were too spicy for me, so I decided to try this sweeter alternative. That was 18 years ago, and it became a family favorite. It tastes great the day after in a cold sandwich, too. Today, our two daughters make this roast often. We also have eight grandchildren and 25 great-grandchildren. -Madeline Strauss, Clinton Township, Michigan

Categories     Dinner     Main Course

Time 1h30m

Number Of Ingredients 10

5 pound pork loin
2 tablespoon olive oil
1 tablespoon thyme (dried)
¼ teaspoon nutmeg (ground)
1 teaspoon allspice
1 teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
¼ cup honey
1 tablespoon orange zest
2 cups cranberry sauce

Steps:

  • Preheat the oven to 375 F degrees and arrange the rack in the middle of the oven.
  • Drizzle the olive oil all over the pork loin. Season with thyme, nutmeg, allspice, salt and pepper on all sides evenly.
  • Heat a large 12 inch cast iron pan with a little bit of olive oil, then brown the pork on all sides, 4 to 6 minutes per side. Sear until it's a deep golden brown and easily releases from the pan. Remove from heat.
  • Drizzle honey on all sides of the pork loin then grate some orange zest over it.
  • Cover with aluminum foil, transfer the skillet to the oven and roast for 30 minutes. Remove the foil and finish roasting for another 30 minutes or until an instant-read thermometer inserted into the thickest part of the pork reads anywhere from 145 to 160 F degrees.
  • Meanwhile prepare the cranberry sauce. I used my own cranberry sauce recipe, however, store bought cranberry sauce will work as well.
  • Transfer the pork roast to a cutting board and let it rest for at least 15 to 20 minutes before slicing into it.
  • Slice then top with cranberry sauce before serving it.

Tips for Making the Perfect Pork Loin Roast with Cranberry Glaze

  • Choose a pork loin roast that is at least 3 pounds. This will ensure that you have enough meat to feed your guests.
  • Trim any excess fat from the roast. This will help the roast cook evenly and prevent it from becoming dry.
  • Season the roast generously with salt and pepper. This will help enhance the flavor of the meat.
  • Sear the roast in a hot skillet before roasting it. This will help create a flavorful crust on the outside of the roast.
  • Roast the pork loin roast at 350 degrees Fahrenheit for about 1 hour and 15 minutes, or until the internal temperature reaches 145 degrees Fahrenheit.
  • While the roast is cooking, make the cranberry glaze. This can be done by combining cranberries, orange juice, sugar, and cinnamon in a saucepan and simmering until thickened.
  • Once the roast is cooked, brush it with the cranberry glaze and return it to the oven for an additional 10 minutes.
  • Let the roast rest for 10 minutes before slicing and serving. This will help the juices redistribute throughout the meat.

Conclusion

Pork loin roast with cranberry glaze is a delicious and easy-to-make dish that is perfect for any occasion. The pork is tender and juicy, and the cranberry glaze adds a sweet and tangy flavor that complements the meat perfectly. This dish is sure to be a hit with your family and friends.
