1 1/2 tablespoons flour
1 1/2 tablespoons vegetable oil
2 medium onions or 4 small onions, thinly sliced
1/2 cup beer (drink left over beer)
1/2 cup hot beef broth
1 tablespoon cornstarch

  • Season chops with salt and pepper; coat with flour.

I'm not that fancy, and just used smooth. I'm also not that smart; the original recipe called for 2 T plus 2 tsp. mustard, but I misread, and used 2 T both times, and it came out very tasty. You may want to adjust according to your tastes.

3/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
4 tablespoons canola oil, divided, more as needed
