An Italian specialty, porchetta is a tasty, herb-roasted pork belly with crisp, crackling skin. Porchetta is a deliciously moist, boneless, fatty pork roast marinated with plenty of garlic, salt, pepper, and aromatic herbs served hot, but you often see it cold sliced up for sandwiches

5 to 6 pound fresh boneless lean pork belly ((skin on))
1 tablespoon fennel seeds ((toasted and coarsely ground))
1½ tablespoons minced fresh sage
1½ tablespoons minced fresh rosemary
½ teaspoon crushed red pepper flakes
4 cloves garlic ((grated or finely minced))
1½ tablespoons sea salt or Kosher salt
1 teaspoon sugar
1 teaspoon freshly ground black pepper
1 tablespoon fresh lemon zest
2 tablespoons light olive oil
1 large onion ((sliced))

Steps:

  • Prepare the pork belly by first scoring the skin lightly in a diagonal checkerboard pattern, allowing for 1 inch between score lines. Take care not to cut through the skin entirely to the fat layer. The idea is to score it just enough that the skin splits while roasting for maximum crispiness and crackling!
  • Next, turn the pork belly skin side down, and use a two pronged roasting fork or a metal kebab skewer to poke 1 inch deep holes on the underside of the belly about 1 inch apart.
  • Prepare the marinade paste by mixing the ground fennel seeds, sage, rosemary, crushed red pepper flakes, garlic, salt, sugar, black pepper, lemon zest, and olive oil. A quick tip is to lightly toast your own fennel seeds in a dry pan for an incredible burst of flavor. They toast very quickly over medium heat, so be careful not to burn them.
  • Rub the marinade all over the pork belly, including the sides and the skin. Place the marinated pork belly skin-side up on a sheet pan, cover in plastic wrap, and place in the refrigerator overnight. 12 hours of marinating time is ideal.
  • The next day, take the marinated pork belly out of the refrigerator and let it sit out at room temperature for about 2 hours. When it's at room temperature, position a rack in the lower third of the oven and preheat to 475 degrees F.
  • Now you're ready to roll your pork belly into that signature porchetta shape. Put the pork belly skin side down. Roll the pork belly from the uncut side until it reaches the other side of the pork belly. Due to the thickness of the cut, it's more like a fold than rolling. Have your butcher string handy, and tie the roast with string around the roast tightly several times, about 1-inch apart.
  • Spread the sliced onion on a sheet pan, and add just enough water to cover the surface of the entire sheet pan. Place the roast on top. If there are still lots of herbs and spices on top of the pork roast, brush them off the skin and place them on the sides, otherwise they will burn.
  • Put the roast in the oven for 15 minutes at 475 degrees F. Rotate the roasting pan 180 degrees, and then roast for another 15 minutes. Reduce the heat to 325F, and continue roasting for 2 hours.
  • Check the pan every 20 minutes, adding enough water to keep the pan juices from burning. It is important not to let the pan drippings burn, since you will be serving your porchetta with it.
  • After a total of 2½ hours in the oven, the skin of your porchetta should be a slightly dark golden brown, and you should be able to see the diagonal scores. At this stage, the skin may look crisp, but if it is still smooth, it will likely still be a bit tough and leathery. So, to make the porchetta skin cracklin' and crispy, turn the oven temperature back up to 450F.
  • Roast the porchetta for another 10 to 15 minutes once the oven reaches 450F, and check it every 5 minutes, or until you see the skin bubble up. The skin on top of the roast will bubble up first, and, when this happens, place a long but narrow piece of foil on top of the roast lengthwise to cover the top end-to-end, leaving the sides of the roast exposed to the high heat. Keep roasting until the skin on both sides get more of that bubbly crackling look.
  • Use your own judgment on how much you want to crisp up the skin. The general the rule of thumb is that if the skin is bubbled up, it will be crispy, and if it is somewhat smooth, then the skin will still be a bit tough and leathery. Once you're satisfied, take the roast out of the oven and let it rest for 15 minutes.
  • After the roast has rested, cut and remove the butcher's string carefully, as it will be stuck to the skin. Transfer the roast to a serving plate, and cut the roast where the string was tied to get perfectly portioned 1½-inch thick slices.
  • Pour the pan juices through a strainer into a gravy separator. If you want more pan juices, pour hot water on the pan to deglaze it first. Pour the juices into a bowl or small gravy pitcher and serve on the side.

Spicy red chile sauce, made with New Mexico red chile powder, is used as both a marinade and a dipping sauce for these small brochettes, which are ideal party food. They are best grilled outdoors over coals, but also work fine on a stovetop cast iron grill or under the broiler. Threading each piece of meat onto two skewers, rather than one, keeps the meat from twirling and makes it easier to grill. (If you're using bamboo skewers, soak them in warm water for 15 minutes, so they won't catch fire.)

1 1/2 to 2 pounds well-marbled pork shoulder, cut into 3/4-inch slices
Kosher salt
2 tablespoons hot New Mexico red chile powder, more for seasoning meat (may substitute ancho or guajillo chile powder)
1 large tomato, about 3/4 pound
4 garlic cloves, mashed to a paste
2 tablespoons lime juice
2 tablespoons olive oil
1 tablespoon toasted coarsely ground cumin

Steps:

  • Cut pork into 2-by-2-by-3/4-inch pieces. (You should have about 24 pieces.) Mix 1 tablespoon salt and 1 teaspoon chile powder. Use mixture to season pork on both sides.
  • To skewer, lay meat flat on cutting board. Thread meat onto two skewers spaced equidistant from center; do this first with one skewer, then the other. Put 3 pieces of pork onto each set of skewers, for eight brochettes total.
  • Cook the tomato (left whole) over hot coals or under broiler until charred and blackened, about 5 minutes. Cut in quarters but do not remove skin.
  • In a blender or food processor, put 1/2 teaspoon salt, 2 tablespoons chile powder, the charred tomato, the garlic, the lime juice, the olive oil and 1 teaspoon cumin. Blend to obtain a smooth sauce and transfer to a bowl.
  • Lay brochettes on a tray in 1 layer. Spoon 8 tablespoons chile sauce over pork and spread to cover evenly. (Save remaining sauce.) Leave at room temperature for 1 hour, or refrigerate several hours, then bring to room temperature.
  • Grill over medium-hot fire for about 3 minutes per side. Sprinkle with remaining toasted cumin. Serve with reserved sauce.

This means cooked hot and fast so it's charred on the outside and medium-rare on the inside. While a grill is ideal here, it can also be prepared on the stovetop in a very hot cast-iron skillet. The garlicky, salty, sweet marinade also doubles as a dressing to be poured over crunchy leaves of lettuce, fresh herbs and, if you're looking for something more substantial, some sort of rice noodle or plain cooked rice.

1 1/2 pounds boneless pork shoulder
Kosher salt and black pepper
1/4 cup fish sauce
3 tablespoons light brown sugar
2 tablespoons sambal chile paste (optional)
2 garlic cloves, finely grated
1 lime, halved crosswise, plus 1/2 cup fresh lime juice (from about 4 limes)
1 orange or tangerine, halved crosswise (optional)
Cooked rice noodles or rice, for serving (optional)
1 head Boston lettuce or escarole, torn into large pieces
6 mint sprigs
1/2 bunch cilantro
1 shallot, thinly sliced into rings

Steps:

  • Using a sharp knife, slice pork shoulder crosswise into 1-inch-thick steaks. (Depending on the shape and cut of your shoulder, some pieces may not stay together in a steak shape; this is O.K.) Season pork with salt and pepper and place in a shallow baking dish (a 9-by-13 works best) or resealable plastic bag.
  • Combine fish sauce, light brown sugar, sambal (if using), garlic and 1/2 cup lime juice in a medium bowl, stirring to dissolve the sugar. Pour half of the mixture over the pork and let it sit for about 15 to 20 minutes while you prepare the grill, using tongs to turn pork once or twice to make sure all of it is getting enough attention from the marinade. (There's no need to refrigerate, unless you are working ahead, in which case you should refrigerate until ready to grill.)
  • If you're using a charcoal grill, build the fire so it's screaming hot. This pork is to be cooked hot and fast, so the hotter the better. If you're using a gas grill, heat it on high. Bring a clean baking dish out to the grill for the pork to rest in after cooking.
  • Once the grill is sufficiently hot, grill the pork until deeply browned and lightly charred on both sides, 2 to 4 minutes per side (this will happen faster on a charcoal grill), moving the pork around as needed to prevent excessive flare-ups, which, depending on how fatty your pork is, will happen with varying severity. Grill the lime and orange, if using, cut-side down, until lightly charred, 1 to 2 minutes.
  • Remove the pork and lime from the grill and let rest a minute or two in that same large baking dish to catch the juices. Drizzle the remaining lime dressing over the sliced pork and let it rest for a few minutes so the juices mix with the dressing.
  • Slice the pork about 1/4 inch thick. Arrange rice noodles or rice, if using, on a large platter and top with lettuce, along with some of the mint, cilantro and shallots. Top with sliced pork and remaining herbs and shallots. Spoon the juices from the bottom of the baking dish over everything, and serve with the grilled citrus for squeezing.

2 teaspoons Dijon mustard
Kosher salt
3 pork tenderloins (about 1 pound each)
Freshly ground black pepper

Steps:

  • Combine the lemon zest, lemon juice, 1/2 cup olive oil, garlic, rosemary, thyme, mustard, and 2 teaspoons salt in a sturdy 1-gallon resealable plastic bag. Add the pork tenderloins and turn to coat with the marinade. Squeeze out the air and seal the bag. Marinate the pork in the refrigerator for at least 3 hours but preferably overnight.
  • Preheat the oven to 400 degrees F.
  • Remove the tenderloins from the marinade and discard the marinade but leave the herbs that cling to the meat. Sprinkle the tenderloins generously with salt and pepper. Heat 3 tablespoons olive oil in a large oven-proof saute pan over medium-high heat. Sear the pork tenderloins on all sides until golden brown. Place the saute pan in the oven and roast the tenderloins for 10 to 15 minutes or until the meat registers 137 degrees F at the thickest part. Transfer the tenderloins to a platter and cover tightly with aluminum foil. Allow to rest for 10 minutes. Carve in 1/2-inch-thick diagonal slices. The thickest part of the tenderloin will be quite pink (it's just fine!) and the thinnest part will be well done. Season with salt and pepper and serve warm, or at room temperature with the juices that collect in the platter.

1/4 c fresh lemon juice
2 clove garlic
1 Tbsp dried thyme (or 4 sprigs fresh))
1 medium bay leaf
1 Tbsp dried basil (or 10 fresh leaves)
2 Tbsp chopped italian parsley leaves
1 Tbsp grated lemon zest
2 Tbsp red wine (or red wine vinegar)
1 Tbsp olive oil
1 tsp fresh ground black pepper

  • 1. Cut meat into bite sized cubes and place in large ziplock bag.
  • 2. In small mixing bowl, crush garlic cloves and bay leaf, then add all other spices.

  • Transfer meat to a cutting board, cover loosely with foil and let rest for at least 10 minutes before slicing.

16 skewers (If using wooden skewers, soak them for 30 minutes in water to cover before threading meat.)
1/4 cup lemongrass paste (see below)
1/2 cup freshly grated coconut or 1/2 cup packaged unsweetened dried shredded coconut
1 tablespoon sugar
1/2 teaspoon salt
1 lb pork tenderloin, pork loin (cut into pieces 1 1/2 inches long by 1 1/4 inches wide and 1/2 thick) or 1 lb fresh ham (cut into pieces 1 1/2 inches long by 1 1/4 inches wide and 1/2 thick)
1 stalk lemongrass, thinly sliced*
2 large shallots, coarsely chopped
5 garlic cloves, coarsely chopped
2 kaffir lime leaves, deveined*
1/8 teaspoon turmeric
1/4 cup water

Steps:

  • Blend all the Lemon paste ingredients in a blender until smooth, approximately 2 to 3 minutes.
  • Combine the lemongrass paste in a bowl with the shredded coconut, sugar and salt, mixing well. Add the pieces of pork and stir to coat thoroughly with the paste. Let marinate for at least an hour at room temperature or as long as overnight in the refrigerator.
  • Prepare a charcoal grill according to manufacturer's instructions or preheat the broiler, positioning a rack about 4 inches from the heat. Dividing the pieces of meat evenly, thread the meat onto wooden or metal skewers. 2 sprig(s) fresh rosemary
2 sprig(s) fresh thyme
2 sprig(s) fresh cilantro
1/4 c dijon or spicy brown mustard
2 Tbsp olive oil
1 tsp garlic powder
2 tsp coarse sea or kosher salt
1 tsp ground black pepper
1/8 c honey
1 c coarse bread crumbs (panko or other)

Steps:

  • 1. Turn crockpot on and place rack inside. If you don't have a rack, roll up two sheets of heavy duty foil to make "runners" to hold the meat up off bottom of crockpot Rub pork roast with olive oil and set aside
  • 2. Remove stems from rosemary, thyme and cilantro and place leaves in food processor Pulse until finely chopped
  • 3. Place mustard, honey, salt, pepper, garlic powder and chopped herbs in mixing bowl Whisk until well blended
  • 4. Using brush or your hands, completely cover pork roast with mustard mixture, rubbing it in well. Roll roast in crumbs until completely covered Let set for about 5 minutes to be sure crumbs adhere to roast (add more if necessary)
  • 5. Place in crockpot, turn setting to low and cook for 6-8 hours until roast is fall apart tender. Be prepared for tempting heavenly smells while it's cooking.

3 tablespoons Spanish olive oil, plus extra for oiling
1 large lemon, juice and rind of, grated
2 garlic cloves, crushed
2 tablespoons chopped fresh flat leaf parsley, plus extra (to garnish)
1 tablespoon Ras El Hanout Spice Blend (Ras-El-Hanout (Moroccan Spice Blend))

  • Cut the pork into pieces about 3/4 in square and put pieces in a large dish that will hold them in a single layer.
