45 wonton wrappers
227 grams pork (minced )
3/4 cups shrimp (peeled, deveined and finely chopped into a paste)
1/2 tsp sesame oil
½ tbsp garlic (minced )
1 stalk green onion (finely chopped)
3 tsp regular soy sauce
1/4 tbsp white granulated sugar
1/2 tbsp cornstarch
1/4 tbsp Shaoxing Cooking Wine
1 cup leafy greens (finely chopped)

Steps:

  • In a large mixing bowl, add your filling ingredients and mix in one direction until the mixture breaks down and the minced pork and shrimp become a paste. If you have a food processor, add your filling ingredients and grind until it's pasty and well combined.

1 cup peanut butter
1/4 cup soy sauce
2 tablespoons toasted sesame oil
2 tablespoons rice vinegar
2 tablespoons brown sugar
2 cloves garlic, finely chopped
2 tablespoons finely grated ginger
2 teaspoons Asian chili paste or sambal oelek
1/2 cup water, plus more if needed
1/2 pound ground pork
1/2 pound peeled and deveined medium shrimp, each cut into thirds
2 tablespoons minced chives
1 tablespoon toasted sesame oil, plus more for drizzling
1 tablespoon soy sauce
1 teaspoon brown sugar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Chicken stock or broth, homemade or store-bought, for boiling the wontons
50 wonton wrappers
1 large egg, beaten
All-purpose flour, for dusting
Cilantro leaves, for garnish
Serrano chiles, thinly sliced, for garnish
