1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 tablespoon poppy seeds
1 teaspoon dill weed
4 cups cubed cooked chicken
3 cups cooked rice

1/2 cup butter, melted

kosher salt
1 large orange
1/2 cup mayonnaise
1/3 cup sour cream or low-fat Greek yogurt
1 tablespoon dijon mustard
1 stalk celery, chopped
1/2 cup chopped pecans, almonds or walnuts, toasted
1/4 cup chopped fresh chives
1 1/2 tablespoons poppy seeds
freshly ground pepper
1/2 cup dried apricots, chopped (optional)
torn lettuce leaves, for serving
4 whole-wheat pitas, halved

Steps:

  • Cover the chicken with cold water in a saucepan and add 1 teaspoon salt. Remove strips of zest from half of the orange with a vegetable peeler; add the zest to the water. 2 1/2 pounds boneless, skinless chicken breasts
4 celery stalks, finely chopped
4 cups seedless grapes, halved
2 cups slivered almonds
2 cups mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons poppy seeds
2 tablespoons dried dill
1 loaf white sandwich bread

Steps:

  • Boil the chicken in a large pot filled with water until done, about 45 minutes. Drain the chicken and set aside to cool.
