BASIC POKE

Basic Poke image

Poke (pronounced POH-kay), is a Hawaiian raw-fish salad made with marlin and ahi (yellowfin) or aku (skipjack) tuna. I make my own version of poke now, here where I live in Oregon, when the weather is good and hot. I drive over to my local fish market, and pick up some fresh kajiki marlin, which I cut into cubes. I buy my seaweed pickled in a bottle from an Asian food market, and I chop a small bunch with half a white onion, toss the garnish onto the cubed marlin in a stainless-steel bowl, squeeze a teaspoon or two of fresh wasabi onto it and mix in splashes of tamari sauce.

Tips:

  • To make the best poke marinade, use fresh, high-quality ingredients.
  • Use a variety of soy sauces to create a marinade with a complex flavor. Experiment with different types, such as regular soy sauce, dark soy sauce, and tamari.
  • If you don't have access to fresh ahi tuna, you can use frozen ahi tuna. Just be sure to thaw it completely before marinating it.
  • Don't over-marinate the ahi tuna, or it will become tough. Marinate it for at least 30 minutes, but no longer than 2 hours.
  • If you're using wooden skewers to grill the ahi tuna, be sure to soak them in water for at least 30 minutes before using them. This will help to prevent them from burning.
  • Serve the poke marinade with a variety of toppings, such as avocado, cucumber, green onions, and sesame seeds.

Conclusion:

Poke marinade is a delicious and versatile marinade that can be used to make a variety of dishes. It's perfect for marinating ahi tuna, but it can also be used to marinate other types of fish, such as salmon or halibut. Whether you're grilling, pan-frying, or baking your fish, poke marinade will add a delicious flavor that your friends and family will love.
