Steps:
- Arrange racks in upper and lower thirds of oven; preheat to 400°F. Line 2 rimmed baking sheets with parchment paper.
- Stir vinegar, honey, red pepper flakes, salt, pepper, and 1 cup water in a medium pot. Add figs and bring to a boil. Reduce heat, bring to a simmer, and cook, stirring occasionally, until figs are softened and liquid has almost evaporated and is a syrupy consistency, 7-10 minutes. Transfer figs to a plate; let cool.
- Beat egg with 1 Tbsp. water in a small bowl. If using a 14-ounce package with 1 sheet of pastry, roll pastry to an 18x12" rectangle on a lightly floured surface. If using a 17-ounce package with 2 sheets of pastry, roll each sheet to a 12x9" rectangle. Cut pastry along the 12" side into 12 (1-inch-wide) strips. Cut each strip crosswise into pieces about 4 1/2" long. You should have 48 (4 1/2x1") strips pastry.
- Scoop a heaping 1/2 tsp. cheese and press into cut side of 1 fig half. Place fig half in the center of 1 pastry strip. Brush 1 end of pastry with egg wash and roll to enclose. Transfer seam side down to prepared sheet. Repeat with remaining cheese, figs, and pastry. Brush top of each pastry with egg wash and sprinkle with seeds, if using. Bake pastries, rotating and switching sheets top to bottom halfway through, until golden brown and puffed, 15-18 minutes.

Steps:
- Place the pancetta in a large skillet over low heat and cook until it has browned and released half of its fat. Remove the pancetta from the skillet with a slotted spoon. Add the olive oil to the skillet and increase the heat to medium. When the pancetta is hot but not smoking, return it to the pan and cook for a few seconds.
- Add the garlic and cook until lightly browned. Add the thyme and cook just until it makes a popping sound. Stir in the vinegar and simmer until reduced to 1/4 cup, about 5 minutes. Crumble the goat cheese into the skillet and cook just until it begins to weep. Toss in the greens and immediately remove the pan from the heat. Toss in the figs and season with salt and pepper to taste. Place the salad in a bowl and serve warm.
Tips:
- Choose ripe, fresh figs: Look for figs that are plump, have a deep color, and are free of blemishes. The figs should also be slightly soft to the touch.
- Use high-quality pancetta: Pancetta is a type of Italian bacon that is salt-cured and seasoned. It has a rich, smoky flavor that pairs well with the sweet figs and tangy goat cheese.
- Don't overcrowd the plank: When placing the figs on the plank, make sure to leave some space between them so that they can cook evenly.
- Cook the figs until they are slightly caramelized: The figs should be cooked until they are slightly softened and have a light golden brown color.
- Use a good quality goat cheese: Goat cheese is a soft, creamy cheese that is made from goat's milk. It has a slightly tangy flavor that complements the sweet figs and smoky pancetta.
- Serve the figs immediately: Planked figs are best served immediately after they are cooked. This will ensure that they are still warm and juicy.
Conclusion:
Planked figs with pancetta and goat cheese is a delicious and elegant appetizer that is perfect for any occasion. The sweet figs, smoky pancetta, and tangy goat cheese pair together perfectly, and the plank cooking method helps to caramelize the figs and create a slightly smoky flavor. This dish is sure to impress your guests, and it is also a great way to enjoy fresh figs in a new and exciting way.
