AUTHENTIC BRITISH SCONES

Authentic British Scones image

An authentic British Scone is the perfect accompaniment to your warming cup of tea, particularly if you have some clotted cream and jam to serve it with!

Time 37m

Number Of Ingredients 9

2 c unbleached all-purpose flour
2 Tbsp sugar
4 tsp baking powder
½ tsp salt
3 Tbsp unsalted butter, cold
⅔ c milk
1 egg yolk beaten with 1 Tbsp milk, (to glaze)
Strawberry jam, (to serve)
Clotted cream, at room temerature (to serve)

Steps:

  • Preheat your oven to 425F.
  • In a medium bowl, place the flour, sugar, baking powder, salt, and butter. Rub the mixture together with your fingers to break up the butter, until the mixture resembles fine breadcrumbs.
  • Add the milk slowly, mixing as you add, using enough of the milk to get your dough to come together with no lumps remaining. (Your dough should be quite sticky. If a good consistency is not achieved with the listed amount of milk, continue adding until your dough reaches a good consistency.)
  • Spoon the dough out until a well-floured surface. Generously dust the top of the dough and knead the dough 2-3 times to coat it with flour and smooth the surface. Press the dough into a round that is roughly 1 inch thick.
  • Using a well-floured cookie cutter, cut the dough into 2 inch circles. (Be sure to press the cookie cutter straight down and up. Twisting the cookie cutter will impact the amount of rise you get on your scones.)
  • Place the rounds onto a greased and floured baking sheet. Brush them gently with the egg yolk and milk mixture.
  • Bake the scones for 12-15 minutes, until golden and firm.
  • Remove the baked scones from the oven and let them cool for 30 minutes (if you can resist). If you like softer scones, cover them with a clean tea towel as they cool.

CREAM TEA SCONES

Cream Tea Scones image

Traditional at English Tea time - these are some of the simplest and best scones I have made. The recipe was originally from a 1987 Canadian Living Cookbook.

Categories     Dessert

Time 35m

Yield 12-16 scones

Number Of Ingredients 10

2 cups all-purpose flour
2 tablespoons granulated sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/3 cup cold butter
1 egg
1 additional egg yolk
1/2 cup approximately half-and-half cream
1 egg white, lightly beaten (reserved from yolk used above)
granulated sugar

Steps:

  • Mix together flour, sugar, baking powder and salt.
  • Cut in butter until mixture resembles coarse crumbs.
  • In a small bowl, combine eggs, egg yolk and cream - beat with a fork until well blended.
  • Add the liquid mix all at once to the dry ingredients, stirring with a fork to make a soft, slightly sticky dough - add a little more cream if necessary.
  • Press into a ball and knead gently on a floured surface about 10 times.
  • Roll out dough to 1/2 inch thick and cut in to triangles or rounds.
  • Place on an ungreased baking sheet and brush with egg white then sprinkle lightly with sugar.
  • Bake in a pre-heated 425 degree oven for 12 - 15 minutes or until golden.
  • Now the very best part. Serve them warm with butter, raspberry or strawberry jam and to be really traditional you may also add a dollop of Devonshire cream. Whipping cream is a good substitute.

OLD FASHIONED ENGLISH LAVENDER TEA SCONES

Old Fashioned English Lavender Tea Scones image

When I was back home in England recently, I visited a local lavender farm called Wold's Way Lavender in North Yorkshire; we had tea and these delicious lavender scones in their delightful little tea room; this is my attempt to recreate those scones - using some of my home-grown culinary lavender from the garden here in France! I have made them several times now and they have turned out just as I remembered them, especially good if split whilst still warm, buttered and spread with lavender honey or lavender-infused cream! Just a note of interest......lavender was often used during Tudor and Elizabethan times in the preparation of a wide variety of dishes and was a particular favourite of Queen Elizabeth I. The palace gardeners were required to have lavender flowers available at all times which were used to make Conserve of Lavender (a mixture of lavender flowers and sugar) and sweet lavender tisane, a drink made with lavender flowers, boiling water and honey.

Tips:

  • Use high-quality ingredients: The quality of your ingredients will directly impact the flavor of your scones. Use real butter, fresh milk, and high-quality flour.
  • Keep the ingredients cold: Cold butter and milk will help to create a flaky scone. You can even freeze the butter before grating it.
  • Don't overmix the dough: Overmixing will make the scones tough. Mix the dough just until it comes together.
  • Chill the dough before baking: Chilling the dough will help to develop the flavor and make the scones easier to handle.
  • Bake the scones in a hot oven: A hot oven will help the scones to rise quickly and evenly.
  • Serve the scones warm: Scones are best served warm, fresh out of the oven. You can also split them and toast them before serving.

Conclusion:

Plain old fashioned tea scones are a classic British treat that can be enjoyed by people of all ages. They are simple to make and can be customized with a variety of different flavors. With a little practice, you'll be able to make perfect scones that will impress your friends and family. So next time you're looking for a delicious and easy breakfast or snack, give these plain old fashioned tea scones a try.
