1/2 medium red onion, chopped
8 fresh white button mushrooms, sliced
1 small green bell pepper, seeded and chopped
1 stick pepperoni, casing removed and cut into a small dice
1 pound ball fresh mozzarella or fresh smoked mozzarella, diced
20 leaves fresh basil, torn or thinly sliced
1 pound wagon wheel pasta, cooked to al dente and cooled under cold water, then drained
1 teaspoon garlic salt
1 teaspoon dried oregano leaves or Italian dried seasoning
1 rounded tablespoon tomato paste
2 tablespoons red wine vinegar, eyeball it
1/3 cup extra-virgin olive oil, eyeball it
Freshly ground black pepper

Steps:

  • Combine tomatoes, onion, mushrooms, peppers, pepperoni, mozzarella, basil and pasta in a big bowl. Whisk garlic salt, oregano or Italian seasoning, tomato paste and vinegar together. 1 package (16 ounces) elbow macaroni
2 jars (14 ounces each) pasta sauce
1/2 cup water
1 package (8 ounces) sliced pepperoni
3 cups shredded part-skim mozzarella cheese, divided
1 medium green pepper, chopped
1 small onion, chopped
1 can (6-1/2 ounces) sliced ripe olives, drained
1 can (6 ounces) sliced mushrooms, drained
1/3 cup grated Parmesan cheese
Additional pasta sauce, optional

Steps:

  • Fold two 18-in.-long pieces of foil into two 18x4-in. strips. Line perimeter of a 5-qt. slow cooker with foil strips; spray with cooking spray., In a 6-qt. stockpot, cook sausage over medium heat until no longer pink, breaking into crumbles. Add pasta; cook and stir 3-4 minutes or until edges become translucent. 1 lb italian sausage - castings removed
1 onion - diced
1 green pepper - diced
1 red bell pepper - diced
8 oz container fresh sliced mushrooms
1/2 tsp salt
1/4 tsp black pepper
1/8 tsp red pepper flakes
1/2 tsp garlic salt
26 oz marinara sauce - home made or jar
14 oz can diced tomatoes
1/2 lb pepperoni - diced
1/2 c parmesan cheese
2 c mozzarella cheese - shredded
1 lb box (medium) macaroni shells

Steps:

  • 1. Preheat oven to 400 degrees. Cook pasta according to package instructions; set aside. Remember that pasta will continue to cook with the casserole when it is baked, so leave noodles al dente (firm to the bite). Heat a large skillet over medium-high heat. Add ground sausage to skillet and sprinkle with a 1/4 teaspoon salt and 1/8 teaspoon pepper; cook until crumbly and no longer pink, about 8 - 10 minutes. Add onion, peppers, mushrooms, diced tomatoes, remaining salt and pepper, red pepper flakes and garlic salt to the skillet; cook for 5 minutes or until vegetables are tender. Add marinara sauce and pepperoni to skillet and bring to a simmer; remove from heat and stir in Parmesan cheese. In a large mixing bowl, combine sausage sauce mixture with pasta. Pour into 13 x 9 casserole dish and top with mozzarella cheese. Bake for 20 minutes or until bubbly and golden brown.
