  • GETTING READY 1. Lengthwise cut loaf in half. 2. Cut cheese into 1 inch thin strips. 3. Preheat oven to 400° Fahrenheit. 4. In a medium bowl, mix together tomato paste, Parmesan cheese, onion, olives, salt, oregano and pepper. 5. Blend in meat. MAKING 6. On each of the loaf halves, spread meat mixture on top. 7. Place loaves on a baking sheet and bake in preheated oven for 20 minutes. 8. Remove loaf from oven and top with slices of tomatoes. 9. Place cheese strips in crisscross pattern atop tomatoes. 10. Bake for another 5 minutes. SERVING 11. Serve hot Pizza By The Yard with some seasonings.

24 ounces pre-purchased pizza dough
1/4 cup olive oil
2 large yellow onions, thinly sliced
1/4 pound ripe Gorgonzola, crumbled
1/4 cup grated Parmesan
1 1/2 teaspoons minced fresh thyme leaves
1/4 teaspoon chili paste
1 cup Quick Tomato Sauce, recipe follows
1/2 cup diced Calabrese salami
1/2 pound mozzarella, sliced
1/4 cup grated pecorino cheese
1 tablespoon chopped oregano

Steps:

  • Preheat oven to 475 degrees F.
  • Lay 2 pizza stones or flat baking sheets side by side in oven.
  • Heat a dry saute pan on the stove over medium-high heat. When the pan is hot, tilt the pan and add the extra-virgin olive oil. Add the onions, salt, and a twist of pepper. Lower the heat to medium and saute, stirring occasionally, for 15 to 20 minutes, or until the onions are caramelized.
  • Roll out dough on a long peel or 2 cutting boards to 1/4-inch thick. Use a bit of flour on the board to keep dough from sticking.
  • Top half of the pizza with caramelized onions, Gorgonzola cheese, thyme, and grated Parmesan. Top the other half of the pizza with the tomato sauce, the Calabrese salami, the mozzarella slices and sprinkle with the grated Pecorino and chopped oregano. Bake until super crispy and cheese is bubbling.

16 ounces unsliced French bread
1 lb lean ground beef
1 (6 ounce) can tomato paste
1/4 cup sliced green onion
1/4 cup chopped pitted ripe olives
1/4 cup water
1/2 teaspoon salt
1/2 teaspoon oregano
1/8 teaspoon ground black pepper
1/3 cup grated parmesan cheese
2 medium tomatoes, sliced
1 medium green sweet pepper, sliced into rings
1 cup shredded pizza cheese, blend

Steps:

  • Preheat broiler.
  • Cut the French bread in half horizontally and place halves, cut side up, on a broiler pan. Broil 4 inches from heat for about 1-2 minutes or until the bread is lightly toasted. Transfer bread to cookie sheets and set aside.
  • Turn off broiler and set oven temperature to 350º.
  • In a large skillet, brown ground beef until thoroughly cooked. Drain off fat.
  • Stir in tomato paste, green onion, olives, water, salt, oregano, and black pepper.
  • Cook over medium heat until heated through. Remove from heat and stir in Parmesan cheese.
  • Top bread halves evenly with the meat mixture.

Next time I want to add mushrooms, or even we could make it a "hawaiian" kind (just top with deli ham slices, pineapple, and Mozzarella cheese). mmmm :) Leftovers (if there are any....) are pretty good too!! ...

1 c sliced olives
1 c chopped onions
1 c grated parmesan cheese
12 oz tomato paste
2 tsp oregano, dried
2 tsp salt
1/2 tsp pepper
2 french bread loaves, cut lengthwise
6 medium tomatoes, sliced thin
4 c mozzarella cheese, shredded

Steps:

  • 1. cook hamburger in large skillet, drain
  • 2. add chopped onion to skillet with hamburger, cook until onions are slightly tender.
  • 3. In lg bowl: mix olives, parm. cheese, tomato paste, oregano, salt & pepper.
  • 4. add contents in bowl to the skillet with the hamburger. heat until heated through.
  • 5. lay the french bread halves, cut side facing up, onto two baking sheets. spread the hamburger mix evenly over the tops, all the way to the edges of the bread. (this keeps the edges from burning while broiling)
  • 6. place under broiler about 3-5 min, then remove
  • 7. top with tomato slices and mozzarella cheese, sprinkle with xtra oregano (optional)
  • 8. broil another 3 min or until cheese is melted and starting to brown.

3 lb ground beef ( sirlon, your choice)
1 c diced onion
2 can(s) musroom slices rinsed 10-12 oz cans
2 can(s) tomato paste, italian lg cans refill cans with water
salt and pepper to taste
1-2 medium green bell peppers sliced or rings
5 c mozzarella cheese grated
can also use black olive slices reduce 1 can mushrooms
2 iltallian bread loaves (yard long) shorter works too

Steps:

  • 1. Brown crumbled ground beef in skillet and drain if necessary.
  • 2. Add tomato paste, onion, mushrooms and (olives if using) add water and stir , simmer til thicened.
  • 3. salt and pepper to taste if you did not use italian seasoned paste you can add italian spices also to taste.
  • 4. Slice loaves in half like a hot dog bun all the way through and place on cookie sheet. or 2 sheet pans.
  • 5. Spoon beef mix onto bread. Both loave you should have 4 pieces to cover with mixture. (or more if using smaller loaves) can sub itallian rolls if making for snacks or appitisers.
  • 6. smother with cheese and add strips of bell pepper.
  • 7. bake at 350 degrees til cheese melts and just starts to brown You won't have to tell them twice that dinner is ready. Enjoy!
  • 8. If you are freezing this do all steps but baking, cut loaves in half then split for ease in wrapping and storage. wrap with foil and plastic and freeze. to bake remove wrap place on cookie sheet and bake til hot throughout. Can be microwaved but I prefer Oven for crispy bread and cheese browing a little.
