This beef stew for the slow cooker has a taste of the Caribbean (brown sugar and rum) that your whole family will love. This recipe is my own creation and uses primarily root vegetables from the ship's hold. Let this cook while you and the crew take on another adventure.

Yield 4

Number Of Ingredients 18

1 pound beef stew meat, cut into 1-inch pieces
3 tablespoons all-purpose flour
salt and ground black pepper to taste
2 tablespoons olive oil
1 small sweet potato, chopped
4 small potatoes, chopped
1 celery rib, chopped
1 turnip, chopped
2 parsnips, chopped
2 tablespoons balsamic vinegar
1 tablespoon butter

¾ cup pineapple juice
1 tablespoon Worcestershire sauce

1 cube beef bouillon
3 tablespoons rum

Steps:

Tips:

  • For a more authentic flavor, use a Dutch oven or a large pot over an open fire. Cast iron is the best choice of pot material for even heat distribution.
  • If you don't have any rum on hand, you can substitute it with white wine or chicken broth. However, rum adds a unique flavor to the stew that is worth trying if you can find it.
  • Feel free to adjust the amount of vegetables in the stew to your liking. You can also add other vegetables, such as carrots, celery, or parsnips.
  • If you want a thicker stew, you can add a cornstarch slurry or a roux. To make a cornstarch slurry, mix together equal parts cornstarch and water until smooth. Then, stir it into the stew and bring to a simmer, stirring constantly. To make a roux, heat some butter in a saucepan over medium heat. Then, whisk in some flour until a paste forms. Slowly whisk in the stew liquid until the roux is smooth. Then, bring the stew to a simmer, stirring constantly.
  • Serve the stew with crusty bread, rice, or mashed potatoes.

Conclusion:

Pirate's Shipwreck Stew is a hearty and flavorful dish that is perfect for a cold winter night. It's easy to make and can be tailored to your own liking. So next time you're looking for a new stew recipe, give this one a try. You won't be disappointed!
