STEAK SANDWICHES - PIONEER WOMAN
A simple, decadent steak sandwich. Credit goes to a rancher's wife known as Pioneer Woman. :) Based on comments received, I have reduced the amount of worcestershire sauce from 1/2 cup, to 1/4-1/2 cup. I suggest starting with the lower amount and adding more if you like.

Steps:
- Melt 2 TBSP butter over medium heat in large skillet. Slice onions and cook until soft and light brown (7-8 minutes). Remove and set aside.
- Meanwhile, slice cube steak thinly against the grain. Sprinkle with seasoned salt.
- After onions have been removed from skillet, melt another 2 TBSP butter over high heat.
- Add meat in single layer. Cook one side until brown (at least one minute), then flip and cook until brown, another minute.
- Add 1/2 cup worcestershire sauce, 5 dashes of Tabasco, and 2 more TBSP butter. Add cooked onions. Stir to combine.
- Using last 2 TBSP butter - butter halved French rolls and brown on skillet or griddle.
- Put bottom half of French rolls on plates. Put one fourth of meat mixture on each, followed by a spoonful of juice from the pan. Top with other half of roll, cut in half, and enjoy!

BEEF STEW WITH ROOT VEGETABLES - PIONEER WOMAN
I was pleasantly surprised with this recipe because it had so few ingredients. I was searching for a new recipe that used beer instead of my usual recipe with red wine and this was perfect. Time is your friend with this recipe. The beef needs to braise for at least 2.5 hours, maybe longer. I used 1 1/2# of beef and did not decrease the liquid amounts. I only use 2 cups broth out of the suggested 4 cups, so you may want to hold off on adding all of it at once. Just keep checking while it simmers and add more as needed along the way. It's a winner.

Steps:
- Trim any excess fat off the beef and cut into 2" cubes.
- Heat the oil and butter in a pan. I use a Dutch oven.
- Season beef with salt & pepper. Add beef to hot pan and brown the beef.
- Remove the beef from the pan, (I moved the beef to the outsides of the pan) throw in the garlic and onions and cook until softened, about 3 minutes.
- Pour in the beer, 1/2 of beef broth, (I started with 1/2 the beef broth and added more when necessary, I only used 2 cups total)
- Add Worcestershire sauce, tomato paste, sugar, paprika.
- Return the beef to the pan, cover and simmer on a low heat until the meat is very tender, 1 1/2 to 2 hours. *This may take longer depending on how large your beef chunks are.
- If the liquid level gets too low, add more broth as needed.
- About 30-45 minutes before the beef is tender, add the carrots, potatoes, parsnips and turnips and continue to simmer until the vegetables are tender and the liquid is reduced, about 30 minutes.
- If the stew is still too liquidy, remove a cup of cooking liquid from the pan and stir in the flour / Wondra. Add the flour mixture back into the pan and stir. Simmer for 10 minutes until the stew is thick. The meat should be very tender; if it's tough, let it continue to cook.
- To finish, add the parsley and stir through the stew.

Steps:
- Preheat the oven to 400°F. Butter a baking dish. FRUIT: In a bowl, combine the peaches, sugar, 1/2 cup of flour, lemon juice, and salt. Stir and set aside. TOPPING: In a separate bowl, combine the 3 cups of flour, sugar, baking powder, and salt. Stir together. Add the butter and shortening, and then cut together with a pastry cutter. Beat the milk and eggs together. Pour into the flour mixture and stir with a fork until just combined. Pour the peaches into the prepared baking dish. Tear off pinches of the dough topping and drop it onto the surface of the fruit, creating a "cobbled" texture. Sprinkle additional sugar over the top. Bake in the oven for about 1 hour, checking about 30 minutes in to see if the top is nice and brown. Once top is browned you your liking, cover loosely with foil for the remainder of the bake time. Allow to sit for 10 to 15 minutes before serving. If the cobbler is too juicy, use a turkey baster to remove a little of the juice, or spoon the juice over ice cream. Serve warm with vanilla ice cream or fresh whipped cream.

PIONEER WOMAN'S BEEF BRISKET
This is a delicious fork tender way to cook brisket and the "au ju" is so good. I serve with her Fluffy New Potatoes (which I have posted to food.com) with the au ju spooned over them, Ree's The Bread (which I've posted as well) and my own Orange Ginger Glazed Carrots, also posted here. . Cooking time does not include 24 - 48 hours marinading time. You can see the entire recipe with picture directions here: http://thepioneerwoman.com/cooking/2007/06/brisket_baby

Steps:
- Combine first five ingredients in large roasting pan (a disposable is just fine because as Ree says: "For Brisket, I sometimes like to use these heavy, disposable aluminum numbers. Makes it easy to pop in the freezer if you want, or to transport it to a picnic, funeral, or tailgating party"). Place brisket in the marinade, fat side up (Ree says: "I usually scoop up some of the marinade and pour it over the top").
- Cover tightly with foil. Marinate in refrigerator for 24-48 hours.
- When ready to cook, place pan covered in foil into a 300-degree oven. Cook brisket for approximately 40 minutes per pound. After your approximate cooking time, open the oven door and peel back the foil. Stick two forks into the meat and make sure it's fork-tender/falling apart, which means you can pull it apart to some degree. It may still be tough in the middle. If it is, just cover it and stick it back in for another hour.
- When fork-tender, transfer whole brisket to a cutting board. With a long, serrated knife, begin cutting away the slab of fat. It should be very easy to remove. If you get a little meat with it, don't panic. There's plenty where that came from.
- Slice against the grain and place slices back into the cooking liquid. Serve immediately, spooning juice over the slices. Barbeque sauce may be used, if preferred. The sauce is really tasty and it'll keep it really moist. If you serve potatoes with it, go ahead and spoon some jus over them, too.
- You may store pan in fridge for up to two days or freeze for use at a later date. If fat collects and hardens at the top, remove and discard.
- Brisket is great with mashed potatoes, with the juice spooned over the top. It's also great on a sandwich with melted cheese.

THE BREAD (REE DRUMMOND/ PIONEER WOMAN)
This bread is everything Ree says and MORE! Ree says this about THE Bread "Whenever I have a friend or family member over for dinner, they will ask the following question: "Are you making The Bread?" And I always smile and say: "Yes. I am making The Bread." I smile because it's a foregone conclusion that I will be making The Bread. I smile because The Bread is so darn delicious and no one who tastes it can believe it contains only two ingredients. I smile because it's probably the easiest, simplest, effortless thing I make. I smile. Because butter is involved. " You can find her actual recipe and pictures at: http://thepioneerwoman.com/cooking/2010/09/the-bread/ Some of Ree's comments are in (parentheses) in the Directions below.

Steps:
- Preheat oven to 350 degrees.
- Spread one stick of softened butter on each half of the loaf (That's one stick per half loaf. Yes, you read that right. The idea here is that every speck of the surface of the bread needs to be coated.).
- Place on a cookie sheet and bake for 10 minutes, or until butter is melted and starting to soak into the bread.
- Crank on broiler and broil bread for 3 to 5 minutes, watching the whole time. Remove when butter has started to brown and blacken. Don't under-broil it! The flavor really kicks in when the butter's color changes (The goal here is to broil the bread to the point that the butter becomes very dark brown and, in just a few areas, begins to burn. When that happens, the flavor shows up. If you don't take it to the next level, it will just be buttered, warm bread. Which is fine, and all...but it's not The Bread).
- Slice into strips and serve immediately (When I serve this, I slice it on a cutting board into relatively thin (because it's so rich) strips).
SCALLOPED POTATOES AND HAM - PIONEER WOMAN
Once again Ree Drummond hits it out of the ballpark. This recipe is terrific and terrific for leftover holiday ham. Rich, creamy....just plain delish!! The only modification I made was that I added 1 Tbsp of garlic powder to the cream mixture for taste, feel free to add more. Definately give this one a try, you won't regret it.

THE PIONEER WOMAN- BLACKBERRY COBBLER #1
This came from www.thepioneerwoman.com "Ree" is an awesome person that is very talented. If only I could photograph the way she does. She makes ALL of her recipes look so yummy. I think some of her pics make some of us "foodies" drool. In the past I have substituted the blackberries for Strawberries (YUM!) and peach because those were the fruits I had on hand. Either way it was good and gone! I'm never not satisfied after trying one of her recipes. And they all make the house smell so good!

Steps:
- Melt butter in a microwaveable dish. (Since Zaar is so picky it wouldn't let me put or 1 stick of butter) Pour 1 cup of sugar and flour into a mixing bowl, whisking in milk. Mix well. Then, pour in melted butter and whisk it all well together. Butter a baking dish OR spray with either Bakers Joy or a non stick spray like Pam.
- Now rinse and pat dry the blackberries, (in the ingredients section the amount should have said 2 generous cups of fruit, silly Zaar.). (Or your favorite fruit) Pour the batter into the buttered baking dish. Sprinkle blackberries over the top of the batter; distributing evenly. Sprinkle 1/4 cup (depending on how wid your pan is, you can get away with less) sugar over the top.
- Bake in the oven at 350 degrees for 1 hour, or until golden brown and bubbly. If you desire, sprinkle an additional teaspoon of sugar over the cobbler 10 minutes before it's done.
- Let cool slightly and serve warm. Or dig in with a fork if you can't wait, but make sure you have some vanilla ice cream and whip cream to put this cobbler over the edge! (Thn hit the gym in the morning cause this cobbler was worth every guilty minute of it).
