pastry for a double-crust 9-inch pie
1 lb cooking apple, peeled, cored, and sliced
2 tablespoons lemon juice
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/2 cup granulated sugar
1/4 cup raisins
1 cup packed light brown sugar
2 tablespoons all-purpose flour
2 tablespoons unsalted butter, cut in small pieces
1/2 ups pecan halves
1/4 cup milk
1/2 cup unsalted butter, room temperature
1 1/2 cups powdered sugar
1 tablespoon boiling water
1 teaspoon rum or 1 teaspoon brandy

Steps:

  • Set oven rack in lowest position and preheat to 450°. Roll out half the pastry and use to line a 9-inch pi plate. Place apples in pastry shell, mounding them toward the center. Sprinkle with lemon juice, nutmeg, and cinnamon. Spread 6 tablespoons of the granulated sugar and all of the raisins evenly over apples.
  • In a separate bowl, mix brown sugar, flour, and butter until well blended and spread this mixture over the apples. Sprinkle with pecans, and add 3 tablespoons of the milk. Roll out remaining pastry and place on pie. Seal and flute the edges. Cut steam vents. Brush top crust with remaining milk, and sprinkle with remaining granulated sugar. Bake 10 minutes, and then reduce oven temperature to 350° and bake an additional 30 minutes until crust is golden brown and filling is bubbly.
  • Meanwhile make the hard sauce. In a medium bowl, cream butter until fluffy, add powdered sugar and boiling water, and beat until well blended. Beat in rum or brandy. Set aside.
  • Cool pie briefly then cut in wedges. Serve on warmed pates topped with hard sauce. Let each slice stand a few minutes before serving so sauce has time to melt down into the filling.

The Pink Tea Cup is a soul food restaurant that has been in Greenwich Village for more than five decades. I was sad to read recently that Greenwich Village is going to lose a little bit of its soul because the Pink Tea Cup has announced it is closing. Third-generation owner Lisa Ford said the eatery will close Jan. 3, 2010 because of a weak economy and rising costs. Ford began working at the restaurant after graduating from college 20 years ago. Her great-aunt, Florida native Mary Raye, opened The Pink Tea Cup in 1954. The restaurant, which seats 42 people, is painted pink inside and out, and is known for its fried chicken, smothered pork chops and catfish. Ford said business has been declining since the Sept. 11 attacks. One of their famous desserts is their Sweet Potato Pie. I had clipped the recipe for this delight some 25 years ago. I am now posting it here for posterity, since it won't be available to enjoy at the restaurant.

  • 1. For the Crust Mix the crumbs, sugar, and butter in a nine inch pie pan or spring form pan. Mix until the crumbs have absorbed the butter and the mixture is uniform. Press the crumbs across the bottom of the pan and up the sides. Bake for eight to ten minutes at 350 degrees. (If it's a hot July day, you can choose not to bake the crust. A baked crust holds together better because the heat melts the sugar to help hold the crumbs together.) For the Filling Using the whip attachment and your stand-type mixer or with a handheld electric mixer, mix the cream cheese and sweetened condensed milk together on medium high speed until the mixture is smooth. (If you place the sweetened condensed milk in the bowl first, the cream cheese will not stick to the bowl and you will have little need to scrape the sides.) 1 1/2 cups finely crushed graham crackers (20 squares)
1/3 cup butter or margarine, melted
3 tablespoons sugar
1 quart (4 cups) vanilla ice cream, softened
1/2 can (12-oz size) frozen pink lemonade concentrate, thawed
1 container (4 oz) frozen whipped topping, thawed
Red food color, if desired
Lemon or lime peel, if desired

Steps:

  • Heat oven to 350°F. In medium bowl, mix all crust ingredients until well blended. Press in bottom and up side of 9-inch glass pie plate. Bake 8 to 10 minutes or until golden brown; cool.
  • In large bowl, mix ice cream, lemonade concentrate, whipped topping and a few drops food color. Spoon and spread ice-cream mixture into cooled crust.
  • Freeze until firm, about 4 hours. Let stand at room temperature a few minutes before cutting. Garnish with lemon peel.
