Time 2h

Yield 6 to 8 servings

Number Of Ingredients 8

1 1/2 cups graham cracker crumbs (crushed in a food processor or in a resealable plastic bag with a rolling pin)
8 tablespoons (1 stick) salted butter, melted
2 tablespoons sugar
One 14-ounce can sweetened condensed milk
2 large egg yolks
1 large grapefruit, zested and juiced (1/2 cup juice)
Red food coloring, for tinting, optional
Whipped cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust: Pour the graham cracker crumbs into a bowl and stir in the melted butter and sugar. Press the mixture into a 9-inch tart pan with a removable bottom and bake until golden and set, about 5 minutes. Set aside to cool slightly.
  • For the filling: Mix the condensed milk, egg yolks and grapefruit zest and juice in the bowl of a mixer, then mix on high until smooth and thick. Add a few drops of the food coloring, if using, to give it a ruby grapefruit color, and stir thoroughly to combine.
  • Pour the mixture into the crust and bake until set, about 15 minutes. Allow to cool, then refrigerate for at least 1 hour. Serve with whipped cream.

Number Of Ingredients 4

2 tablespoons colored sanding sugar
1 lime
6 teaspoons pomegranate syrup or grenadine
1 1/2 cups pink-grapefruit juice

Steps:

  • Place sanding sugar in a shallow dish or plate. Slice six thin rounds from the middle of lime; set aside. Rub lime wedge around rims of six glasses; dip each rim in sugar to coat. Pour 1 teaspoon pomegranate syrup into bottom of each glass.
  • Place grapefruit juice and 2 cups ice cubes in a blender. Process on high speed until ice is crushed. Pour frozen mixture into glasses, and stir to combine with syrup. Garnish with reserved lime rounds, and serve immediately.

Tips:

  • Choose the ripest pink grapefruits: Look for grapefruits that are heavy for their size and have a deep pink color. Avoid fruits with blemishes or bruises.
  • Use a sharp knife to cut the grapefruits: This will help prevent the fruit from tearing and make it easier to remove the segments.
  • Be careful not to overcook the grapefruit segments: They should be tender but still hold their shape.
  • Chill the edamame ice cream before serving: This will help it firm up and scoop more easily.
  • Toast the black sesame seeds before using: This will bring out their flavor and make them more fragrant.

Conclusion:

This pink grapefruit tart with edamame ice cream and black sesame seeds is a unique and delicious dessert that is perfect for any occasion. The tart crust is made with a combination of almond flour, oat flour, and coconut oil, which gives it a nutty and slightly sweet flavor. The filling is made with fresh pink grapefruit segments, which are cooked in a simple syrup and then chilled. The edamame ice cream is made with fresh edamame beans, coconut milk, and honey, and it has a light and creamy texture with a subtle nutty flavor. The tart is finished with a sprinkling of toasted black sesame seeds, which add a touch of crunch and visual appeal.
