1 can (8 ounces) crushed pineapple, drained
1/2 cup heavy whipping cream
2 tablespoons confectioners' sugar

3 oz package lime jell-o
1 c boiling water
20 oz can crushed pineapple, drain, reserve juice
1/2 c of the reserved pineapple juice
1 1/2 c cooked fluffy rice, cold
14 oz can sweetened condensed milk, chilled (eagle brand)

Steps:

  • 1. Dissolve Jell-O in boiling water; add pineapple juice and chill for 1 hour to cool. Also chill the sweetened condensed milk for 1 hour. Beat condensed milk(NOT evaporated milk) on high for about 3 minutes, till thick. Beat Jell-O about 3 minutes with mixer on high until mixture is light and fluffy, then add the whipped milk. Fold in rice and well drained pineapple. Chill for about 1 hour.

5 cups milk
2 teaspoons vanilla essence
13 ounces crushed pineapple
3/4 cup sugar

  • Rinse rice.
  • Bring milk to a boil in saucepan.
  • Add rice. When boiling, reduce heat and simmer (covered) on low heat 45-50 minutes, or til milk has been absorbed.
  • Remove from heat.

1 (3 ounce) package lime Jell-O gelatin
1 cup boiling water
1 (20 ounce) can crushed pineapple, drained
1/2 cup pineapple juice, reserved from draining crushed pineapple
1 1/2 cups cooked rice, cold
1 (14 ounce) can sweetened condensed milk, chilled

Steps:

  • Dissolve Jello gelatin in boiling water; add pineapple juice and refrigerate 1 hour to cool. Also chill the condensed milk for 1 hour.
  • Beat the condensed milk till thick (I use my kitchenaid mixer on high for 5 minutes.).
  • Beat Jello till light and fluffy (about 3 minutes with a mixer), then add condensed milk.
