Tips:

  • Use fresh pineapple for the best flavor. If using canned pineapple, be sure to drain it well and pat it dry.
  • To make the shortbread crust, be sure to use cold butter. This will help to keep the crust flaky.
  • If you don't have a food processor, you can make the shortbread crust by hand. Simply cream the butter and sugar together until light and fluffy, then add the flour and mix until the dough just comes together.
  • Don't overmix the pie dough. Overmixing will make the dough tough.
  • When baking the pie, be sure to preheat the oven. This will help to ensure that the crust is cooked through.
  • Let the pie cool completely before serving. This will help to prevent the filling from running out.

Conclusion:

Pineapple pie with shortbread pie crust is a delicious and easy-to-make dessert. The combination of sweet pineapple and flaky shortbread crust is sure to please everyone. This pie is perfect for any occasion, from a casual get-together to a special holiday dinner.
