Time 45m

Number Of Ingredients 6

2 pounds Bartlett pears
1 pound peeled and cored pineapple
1/2 cup water
1 tablespoon fresh lemon juice
1 cup sugar
zest from 1 lemon

Steps:

  • Peel, quarter and core the pears. Cut the pears and the pineapple into pieces about the size of a lima bean.
  • Combine the fruit, water and lemon juice in a heavy, non-reactive 5-quart pan. Cover the pan and bring it to a boil. Uncover and simmer for 15 minutes, stirring occasionally.
  • Add 1/2 cup of the sugar, then allow the liquid to return to a boil before adding the last 1/2 cup of sugar. Continue cooking the mixture for 10 minutes, stirring frequently. Reduce the jam to 3 1/2 cups and until the mixture reaches 212º-214º on an instant read thermometer. Remove from the heat and stir in the lemon zest.
  • Fill hot, sterilized jars to within 1/4" of the lips. Wipe the rims clean, place new lids on the jars, and screw the caps on tightly. Invert quickly for a quick vacuum seal, or process in a boiling water bath, submerged by 1 inch, for 10 minutes.

PEAR JAM

Pear Jam image

This has been my favorite jam since I was a little girl. We moved around a lot when I was young; my Grandmother would send this jam to us so that we still felt we were close to 'Grandma's house.' I love it on warm homemade bread or peanut butter and jam sandwiches. Enjoy!

Time 1h35m

Yield 64

Number Of Ingredients 10

4 ½ cups mashed ripe pears
3 tablespoons powdered fruit pectin
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground allspice
½ teaspoon ground nutmeg
¼ cup lemon juice
7 ½ cups white sugar
1 teaspoon butter
8 half-pint canning jars with lids and rings, or as needed

Steps:

  • Mix pears, fruit pectin, cinnamon, cloves, allspice, nutmeg, and lemon juice in a large heavy pot; bring to a boil, stirring constantly. Add sugar all at once, stirring, and bring back to a full rolling boil. Boil for 1 minute. Mix in butter to settle foam.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the pear jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

PINEAPPLE-PEACH JAM

Pineapple-Peach Jam image

I stumbled on this when I had an excess of pineapple and peaches. The resulting jam tasted a lot like duck sauce when warm, and it makes an excellent condiment to savory meals and accompanies chicken nicely. Cold, it's also a delicious jam. Creates about 8 to 10 half-pint jars, depending on the size of your peaches and pineapple.

Time 2h

Number Of Ingredients 5

4 c pears, peeled, cored, mashed
10 oz pineapple, crushed, reserve juice
1 1/2 Tbsp lemon juice concentrate
1 pkg fruit pectin, powdered
4 1/2 c sugar

  • 5. Skim foam from top. Ladle into hot jars and fill 1/8 inch from the top. Make sure to use a wet paper towel to clean rim of jar of any preserve on rim.
  • 6. Carefully place lids and tighten rings. Process in a water boiling canner or steam canner for 5 minutes for 1/2 Pints and 10 minutes for Pints.

Tips:

  • Choose ripe and fragrant fruits: The quality of your jam will depend on the quality of your fruits. Choose ripe, juicy pineapples and pears that are free of blemishes and bruises.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will help distribute heat evenly and prevent scorching.
  • Don't overcook the jam: Overcooked jam will be thick and chewy. Cook the jam until it reaches a thick, spreadable consistency, but be careful not to overcook it.
  • Use a candy thermometer: A candy thermometer will help you determine when the jam has reached the correct temperature. The jam should reach a temperature of 220°F (105°C).
  • Can the jam properly: Canning is a great way to preserve your jam and enjoy it for months to come. Follow the canning instructions carefully to ensure that your jam is safe to eat.

Conclusion:

Pineapple pear jam is a delicious and versatile spread that can be enjoyed on toast, waffles, pancakes, or ice cream. It's also a great way to use up leftover fruit. With a little time and effort, you can easily make your own pineapple pear jam at home. So next time you have some fresh pineapples and pears on hand, give this recipe a try!
