GIN PUNCH
We found this recipe in Jerry Thomas's 1862 How to Mix Drinks or the Bon Vivant's Companion, in a recipe for a single serving. It called for Holland gin-or genever, as we know it today-and was probably a very popular drink. The back story is that when planning our first End of Prohibition party we were searching for punch recipes that could be served in teacups. So we started going through books and shot a few ideas back and forth until we found papa Jerry's recipe. We replaced the genever with Plymouth gin, and with a few more tweaks we got it perfect. The decorative ice block adds a great visual effect.

Steps:
- Make ginger syrup:
- Bring water, sugar, and ginger to a boil in a 1- to 1 1/2-quart saucepan, stirring until sugar is dissolved. Simmer, uncovered, stirring occasionally, 10 minutes, then remove from heat and steep, uncovered, 15 minutes. Pour syrup through a sieve into a bowl, discarding ginger. Chill, covered, until cold, about 2 hours.
- Make punch:
- Stir together ginger syrup and fruit juices in a punch bowl or pitcher. Stir in sparkling water and ice.
Tips:
- Use fresh pineapple. Fresh pineapple has a brighter flavor and more nutrients than canned pineapple.
- Choose a good gin. A good gin will have a smooth, clean flavor. Avoid gins that are too harsh or juniper-forward.
- Make the punch ahead of time. This will allow the flavors to meld and develop.
- Serve the punch chilled. A cold punch is more refreshing and enjoyable.
- Garnish the punch with pineapple slices, mint leaves, or lime wedges. This will add a festive touch and make the punch more visually appealing.
Conclusion:
Pineapple gin punch is a refreshing and flavorful cocktail that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. Whether you are hosting a party or just looking for a delicious drink to enjoy on a hot summer day, pineapple gin punch is sure to be a hit.
