Provided by á-2795

Number Of Ingredients 11

1 pound of golden raisins
8 oz. each red and green glazed cherries
2/3 cup slivered almonds
2 cups crushed pineapple
3/4 cup butter or margarine
1 cup white sugar
3 eggs
2 1/4 cups flour
1 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon almond and vanilla flavouring

Steps:

  • Mix first four ingredients and let set over night. Then mix the next ingredients and stir in the raisin mixture. Bake 325°F for 1 1/2 hour

Tips:

  • Use fresh pineapple. Fresh pineapple has a brighter flavor and more moisture than canned pineapple. If you're using canned pineapple, be sure to drain it well and pat it dry.
  • Don't overmix the batter. Overmixing the batter will make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven. This will help the cake rise evenly.
  • Let the cake cool completely before frosting it. This will help the frosting set properly.
  • Store the cake in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 1 week.

Conclusion:

Pineapple fruit cake is a delicious and versatile cake that can be enjoyed for breakfast, dessert, or as a snack. It's easy to make and can be customized to your liking. Whether you like your cake moist or dense, with or without nuts, or with a variety of fruits, there's a pineapple fruit cake recipe out there for you.
