Found this recipe on ABC11's Mr Food section. Haven't tried this, but I think if you like Pina Coladas you'll like it. It probably makes a moist sweet bird.

1 tablespoon vegetable oil
4 boneless skinless chicken breast halves (about 1-1/2 pounds total)
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (8 1/2 ounce) can cream of coconut
1/2 cup heavy cream
1 (8 1/4 ounce) can pineapple tidbits, drained
10 maraschino cherries, cut in half
1/4 cup sweetened flaked coconut, toasted

Steps:

  • In a large skillet, heat the oil over medium heat.
  • Season the chicken with the salt and pepper and sauté for 3 to 4 minutes per side, or until no pink remains and the juices run clear.
  • Remove to a platter and cover to keep warm.
  • Add the cream of coconut and heavy cream to the skillet; cook for 1 to 2 minutes, stirring until well combined.
  • Stir in the pineapple and cherries and return the chicken to the skillet.
  • Cook for 2 to 4 minutes, or until heated through. Sprinkle with the toasted coconut, and serve.

6 boneless skinless chicken breast halves
1/3 cup light corn syrup
1 (8 ounce) can crushed pineapple, undrained
2 teaspoons soy sauce
1/4 cup light rum or 1/4 cup dark rum
1/4 cup shredded sweetened coconut
1/4 teaspoon ground ginger
1/4 teaspoon salt

Steps:

  • Place chicken in a shallow glass baking dish.
  • Place all other ingredients in a blender and blend thoroughly. Reserve 1/2 cup pina colada sauce, cover and refrigerate until ready to use for basting. Pour remaining pina colada marinade over chicken, cover and refrigerate 3 to 4 hours, or overnight.
  • Preheat grill to medium-high heat. Grill chicken 3 to 4 minutes per side, basting with reserved pina colada sauce and turning over frequently, until no pink remains and the juices run clear.

This is an adaption of another recipe. I recently took it to a Pot luck, the chicken bites disappeared quickly and everyone wanted the recipe. The chicken can be left in larger pieces for a main course, just adjust the baking time to assure that your chicken is fully cooked. This is a pleasant change to the coconut shrimp....

CHICKEN
1 1/2 lb chicken breast halves, skinless and boneless
1 c flour
1/2 c panko bread crumbs
1 c coconut
salt and pepper for seasoning
1/2 c buttermilk
1/2 c melted butter
SAUCE
1 c brown sugar
1/4 lb butter
1/3 c flour
1 1/2 c pineapple juice
1/2 c coconut milk

Steps:

  • 1. Melt butter in sauce pan.
  • 2. Add brown sugar and stir over med heat until sugar is melted and browns slightly.
  • 3. Add flour, stirring until well blended over med heat. Mixture will thicken.
  • 4. Add juice and coconut milk to sauce mixture. While cooking over low heat mixture will thicken, stir occasionally. While sauce is simmering prepare chicken.
  • 5. Cut raw chicken into bite size pieces.
  • 6. Place chicken pieces into a bowl with the buttermilk.
  • 7. Place flour, panko, coconut and seasonings in plastic bag, mix well. Place chicken in bag, a few pieces at a time and shake to cover well.
  • 8. Place chicken pieces on parchment lined baking pan. Drizzle with melted butter.
  • 9. Bake at 400 degrees for 15 - 20 minutes until cooked through and browned.
