1 tablespoon Worcestershire sauce
1 teaspoon dark sesame oil or vegetable oil
1 medium red bell pepper, chopped (1 cup)
4 to 6 medium green onions, sliced (1/2 cup)

Steps:

  • Heat olive oil in 10-inch skillet over medium-high heat. Cook beef in oil, stirring occasionally, until brown. Remove beef from skillet.
  • Add mushrooms and garlic to skillet. Cook about 3 minutes, stirring occasionally, until mushrooms begin to brown.
  • Stir in rice. Stir in broth, Worcestershire sauce, sesame oil and bell pepper. Heat to boiling; reduce heat. Return beef to skillet. Cover and simmer without stirring 15 to 20 minutes or until rice is tender and liquid is absorbed. Sprinkle with onions.

1/2 pound ground lamb, pork, turkey, chicken, beef, or a combination

1 1/2 cups chicken, beef, or vegetable stock, preferably homemade (page 160 or 162)
1/2 cup chopped fresh parsley leaves
2 tablespoons fresh lemon juice

Steps:

  • Put 1 tablespoon of the butter in a large deep skillet with a lid and place over medium heat. Crumble the meat and add it to the pan along with a large pinch of salt; cook, stirring occasionally to break up the lumps, until the meat loses its color, less than 5 minutes. Remove with a slotted spoon.
  • Add the remaining butter to the skillet, followed by the onion and a little more salt; cook, stirring occasionally, until the onion turns translucent, 5 to 10 minutes. Add the bay leaves and rice and cook, stirring occasionally, until the rice is glossy and begins to brown, 3 to 5 minutes. Return the meat to the pan, then stir the mixture and sprinkle with salt, pepper, and cinnamon.
  • Add the stock and stir. Raise the heat and bring the mixture to a boil; cook for a minute or two, then reduce the heat to low and cover. Cook for about 15 minutes, or until most of the liquid has been absorbed. Turn the heat to the absolute minimum (if you have an electric stove, turn the heat off and let the pan sit on the burner) and let rest for another 15 to 30 minutes, until the rice is tender. 1 tablespoon unsalted butter
1/2 medium onion, finely chopped
1/2 medium red bell pepper, finely chopped
1 1/2 teaspoons kosher salt plus 2 pinches
2 cups long-grain white rice
1 pinch saffron, steeped in 1/4 cup hot but not boiling water
2 1/2 cups chicken broth
1 1-by-2-inch strip orange zest
2 bay leaves
1/2 cup peas, fresh or frozen
1/4 cup golden raisins
1/4 cup pistachios, chopped

Steps:

  • Preheat the oven to 350.
  • Melt the butter in a 3-quart saucier over medium heat.
  • Stir in the onion, bell pepper and 2 pinches of salt.
  • Decrease the heat to low and sweat until the onion is translucent and aromatic but not browned, 3 to 4 minutes. Increase the heat to medium and add the rice. Cook, stirring frequently, until you smell nuts, another 3 to 4 minutes.
  • Add the saffron and its water, the broth, orange zest, bay leaves and the remaining 1 1/2 teaspoons salt. Increase the heat and bring to a boil.
  • OK, now the weird part: Thoroughly wet a clean towel, kill the heat, scatter the peas on top of the rice, then place the towel across the top of the saucier. Top with the lid, then fold the towel corners up over the lid.
  • Transfer the saucier (towel and all) to the oven and bake 15 minutes.
  • Remove and rest at room temperature for 15 more minutes without opening the lid.
  • Fish out the orange zest and bay leaves. Turn the pilaf out onto a platter, fluff with a large fork and garnish with the raisins and pistachios. Serve family-style, right in the middle of the table.

½ teaspoon Aleppo pepper
¼ teaspoon ground turmeric
¼ cup walnut halves, (toasted)
¼ cup pine nuts, (toasted)
¼ cup sliced almonds, (toasted)
¼ cup dried fruit, (such as raisins or chopped dried apricots)

Steps:

  • Wash the rice very well a few times until the water is clear. You can let it soak in water for about 10 minutes or so while preparing the rest of the ingredients.
  • In a large heavy pan with a lid, heat 2 tablespoons extra virgin olive oil over medium-high heat. Add the onions and garlic and cook for about 3 to 5 minutes, tossing regularly until softened. Add the peas and carrots. Season with a good pinch of kosher salt. Add the spices and mix to combine. Cook for another 5 minutes or so, tossing regularly until the carrots have softened.
  • Drain the rice well and add it to the pan. Toss around to make sure the rice is well-coated with the spices. Pour in 2 ¼ cup of water. And season well with a big dash of kosher salt. Bring to a boil, then turn the heat to low. Cover and cook for 15 to 20 minutes until the rice is cooked through and has absorbed all the liquid.
  • Allow the rice about 5 to 10 minutes to rest before serving.
  • Serve with the nuts and raisins on top.

1 red or white onion , chopped
1 garlic clove , crushed
4 cardamom pods , bashed
1 tsp ground cumin
1 cinnamon stick
100g mixed brown and wild rice (or basmati)
300ml vegetable stock
handful leftover cooked turkey , goose or duck, shredded
handful toasted nuts
handful coriander , roughly chopped
leftover cranberry sauce, to serve

Steps:

  • Heat the oil in a pan and gently fry the onions and garlic until softened, about 5 mins. Add the spices and rice, then stir-fry for 1-2 mins. 1-1 1/2 lb ground beef or lamb
1/4 c butter
1 c slivered blanched almonds or pine nuts, toasted
2 Tbsp butter
2 c parboiled rice
2 tsp salt
1/2 tsp pepper
1/2 tsp allspice
1/2 tsp cinnamon
1/2 tsp nutmeg
3 1/2 c water

Steps:

  • 1. Lightly brown the blanced slivered almond or pine nuts in the 2 tbsp butter, on medium, until golden. Don't leave these unattended as they burn easily.
  • 2. In separate pan, brown meat in 1/4 cup butter.
  • 3. Add the salt & all spices. Stir for 2 minutes.
  • 4. Add the hot water.
  • 5. Bring to a boil, then down to a simmer.
  • 6. Cover & simmer over low for about 25 minutes or until water is abosorbed & rice is tender.
  • 7. Add the toasted pinenuts reserving a small amount for garnish.
