Time 1h15m

Yield 3 cups

Number Of Ingredients 8

3 ears corn, kernels cut from the cob
1 red bell pepper, diced
1 orange bell pepper, diced
1 jalapeño, diced (seeds and ribs removed if desired)
1/2 small red onion, diced
3/4 cup white wine vinegar
1 tablespoon kosher salt
1 tablespoon sugar

  • Put corn, red and orange bell peppers, jalapeño and red onion in a large bowl. Bring vinegar, salt, sugar and 1/4 cup water to a boil and immediately pour over relish. Let cool in the fridge for at least 1 hour or up to overnight. Will stay good for up to 1 month.

Tips:

- Always use fresh, high-quality corn for the best flavor. - If you can't find pickling salt, you can use regular salt, but be sure to reduce the amount by half. - Sterilize your jars and lids before using them. This will help to prevent spoilage. - Pack the relish tightly into the jars, leaving 1/2 inch of headspace. - Process the jars in a boiling water bath for 10 minutes. This will help to seal the jars and prevent spoilage. - Let the relish cool completely before storing it in a cool, dark place. - Pickled sweet corn relish will keep for up to 6 months.

Conclusion:

Pickled sweet corn relish is a delicious and versatile condiment that can be used in a variety of dishes. It's perfect for hot dogs, hamburgers, sandwiches, and salads. It can also be used as a dipping sauce for vegetables or crackers. With its sweet and tangy flavor, pickled sweet corn relish is sure to be a hit at your next party or gathering.
