Tips:

  • Choose a firm, dense head of red cabbage for pickling. A loose, leafy head will not hold up well in the pickling liquid.
  • Use a food processor or sharp knife to thinly slice the cabbage. This will help it absorb the pickling liquid more evenly.
  • If you don't have a pickling spice mix, you can make your own using whole cloves, allspice berries, mustard seeds, and black peppercorns.
  • Taste the pickling liquid before adding the cabbage. It should be sweet and sour, with a slightly salty flavor. Adjust the seasonings to your liking.
  • Let the cabbage pickle for at least 24 hours before serving. This will give it time to absorb the flavors of the pickling liquid.
  • Store the pickled cabbage in a cool, dark place. It will keep for several weeks.

Conclusion:

Pickled sweet and sour red cabbage is a delicious and versatile condiment that can be used in a variety of dishes. It is a great addition to sandwiches, salads, and tacos. It can also be used as a topping for grilled or roasted meats. If you are looking for a new and exciting way to enjoy red cabbage, give this pickled recipe a try.
