1 cabbage (about 2 lbs, cut into about 1-inch squares)
2 carrots (large, shredded)
6 garlic cloves (thinly sliced)
1 red chili pepper (seeds removed and thinly sliced)
1/3 cup sunflower oil
1/3 cup water
2/3 cup white vinegar
2 Tbsp honey
1 1/2 Tbsp kosher salt (or sea salt)
1 tsp black pepper (optional; or substitute for ground coriander seeds)

Steps:

  • Mix the cabbage, shredded carrots, garlic, hot pepper and black pepper in a large bowl.
  • In a small sauce pan, bring the water, olive oil, vinegar and salt to a boil. Stir to dissolve the salt. Add the honey, stir and bring to boil again.
  • Pour the hot pickling liquid over the cabbage then toss the cabbage with two large spoons. Let cool for a few minutes.
  • Transfer to a 2 quart jar, packing tightly. Cover with a lid and let cool to room temperature then refrigerate. It will only get better with time.

1 medium bell pepper (any color)
2 cups water
7 tbsp. sugar
1 tbsp. salt
6 tbsp. vinegar
1/3 cup olive oil

Steps:

  • Thinly slice the cabbage and bell pepper. Shred the carrot. Place the vegetables in a large bowl and mix well.
  • Transfer the cabbage mix into a glass jar, packing tightly.
  • In a small saucepan, bring the water, sugar, and salt to a boil. Remove the pan from the heat and add the vinegar and olive oil. Give it a stir, and pour the marinade into the jar with the cabbage.*

1 red bell pepper, chopped fine
1 onion, chopped fine
2 c sugar
1 c white vinegar
1 tsp mustard seed, crushed
1 tsp celery seed
salt and pepper to taste

  • 1. I have used my food processor to chop the ingredients and I have done it by hand. Either way will be work as long as you cut everything "fine".
  • 2. Combine cabbage, red bell pepper, and onion.

2 heads cabbage, finely shredded
3 tablespoons salt
4 cups water
4 cups vinegar
1 ½ cups white sugar
1 cup vegetable oil
1 tablespoon ground turmeric
1 tablespoon celery seed

10 onions, chopped
10 sweet red peppers, chopped

Steps:

  • Place cabbage in a large non-reactive bowl or plastic food-safe bucket. Sprinkle salt over cabbage and toss to combine. Cover with plastic wrap or a lid. Let soak in the refrigerator, 8 hours to overnight.
  • Squeeze out liquid from the cabbage; drain.

  • Remove the jars from the pot and place onto a cloth-covered or wood surface, several inches apart, until cool. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

2 lbs cabbage, cored and shredded
5 cups bell peppers, cut into thin strips (a mix of red and yellow is pretty)
1/4 cup pickling salt
1 cup sugar
1 1/2 cups white wine vinegar
1/2 teaspoon hot pepper flakes
4 teaspoons mustard seeds
6 garlic cloves, minced

Steps:

  • In a large bowl or cork, toss the cabbage and peppers with the salt. Cover and let stand in a cool place for 8-12 hours.
  • In a non-reactive saucepan, combine the sugar and vinegar. Bring to a boil, then let it cool.
  • Rinse the cabbage, and drain it well. Toss with the pepper flakes, mustard seeds and garlic. Pack the vegetable mixture firmly into pint mason jars. 1 pound cabbage

4 teaspoons salt

  • Cut a 1/2" slice from the stem end of the peppers and reserve. Carefully remove and discard seeds. Cover the peppers with well-salted cold water and let stand overnight. The next day, drain the peppers. Chop the cabbage fine, and mix with cloves, salt, celery seed, mustard seed and cinnamon. Fill the peppers with this mixture, replace end slices and tie in place. Place the peppers upright in a crock or large jars. Bring the vinegar and sugar to a boil and pour over the peppers. Place a plate or lid on top of the peppers, weight the plate, and cover the crock.   • Cut 2 small slits in each pepper. Dissolve salt in 4 quarts water. Pour over peppers; let stand 12 to 18 hours in a cool place. Drain; rinse and drain thoroughly. , In a Dutch oven, combine the vinegar, sugar, garlic and remaining water; bring to a boil and simmer 15 minutes. Remove garlic. Pack peppers into hot pint jars, leaving 1/2-in. headspace. Carefully ladle hot liquid over peppers, leaving 1/2-in. headspace. Remove air bubbles with a non-metallic utensil. Adjust lids. Process 10 minutes in a boiling-water canner.
