This is from Jamie Oliver's Ministry Of Food cookbook. I love the idea behind it, so I thought I would share it with you. The idea is simple, you choose 1 ingredient from each section, and build your salad from the ground up, to suit your tastes! You then dress it with a salad dressing of your choice. Use the measurements included as a guide only (I haven't added measurements for each ingredient, just an example in each category), as that is all up too you also! There are no rules, just choose your 6 ingredients, and build your own great salad!

Number Of Ingredients 24

1 round lettuce
oakleaf lettuce
lamb's lettuce
watercress
1 cos lettuce
little gem lettuce
chicory lettuce
radicchio
4 tablespoons of fresh mint
fresh basil
fresh flat leaf parsley
fresh rocket
1 cucumber
tomatoes
carrot
celery
1/4 cup parmesan cheese
mozzarella cheese
feta
creamy blue cheese
2 tablespoons mixed seeds, toasted
pine nuts, toasted
rustic crouton
pappadams, crumbled

Steps:

  • Choose an ingredient from each of the 6 groups above.
  • Wash and spin dry the soft and crunchy leaves.
  • Pick the herby leaves off their stalks.
  • Finely slice or peel the veg and shave, tear or crumble up the cheese.
  • Toss everything together in a large bowl.
  • Dress simply with your choice of dressing, and season with a pinch of salt and freshly ground black pepper if needed.
  • Divide the salad between your serving bowls and sprinkle over your chosen topping.

400g of your favourite pasta (shells or butterflies work well)
3 tbsp olive oil
3 tbsp pesto
100g frozen peas , defrosted
100g sweetcorn from a can, drained (or use defrosted frozen sweetcorn)
290g pack baby mozzarella
100g cherry tomatoes , halved
50g pitted black olives , halved
3 spring onions , trimmed and chopped

Steps:

  • Cook the pasta following pack instructions, then drain and toss in 1 tbsp oil. Transfer to a large bowl and set aside to cool, tossing occasionally so the pasta doesn't stick. Mix the remaining olive oil with the pesto and set aside. Both can be prepared up to two days ahead, then covered and chilled.
  • Put all the ingredients into individual bowls and serve with a large empty bowl and wooden spoon for mixing individual portions of pasta salad with your choice of ingredients.

1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped green bell pepper
3/4 cup sugar
1/2 cup apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1 1/2 tablespoons cornstarch

Steps:

  • Place mixed vegetables and kidney beans in a colander or strainer and rinse thoroughly; drain.
  • Mix together mixed vegetables, kidney beans, celery, onion, and bell peppers in a large bowl.
  • Heat sugar, vinegar, salt, pepper, garlic powder and cornstarch in a saucepan over medium heat, stirring until sugar and cornstarch dissolve; continue stirring until thickened; remove from heat.
  • When dressing has cooled somewhat, toss with salad, mixing well.
  • Chill well before serving.
