Time 1h35m

Yield 4 servings

Number Of Ingredients 14

2 tablespoons canola oil
1 (2 to 3 pound) pheasant
Salt and black pepper
1/2 cup (1 stick or 8 tablespoons) softened butter
1 large red onion, chopped
2 cloves garlic, lightly crushed with the side of a knife blade
1 cup Marsala wine
2 bay leaves
3 tablespoons chopped fresh parsley leaves
1 tablespoon balsamic vinegar
1/2 cup brown sauce
4 sheets puff pastry dough (these are often sold in 17 or 18-ounce packages containing
2 (9 or 10 inch) square sheets puff pastry)
2 eggs, beaten

Steps:

  • Heat the canola oil over medium heat in a large saute pan. Season the pheasant with salt and pepper and coat with the softened butter. Brown all sides of the pheasant until golden brown and remove to a utility platter. To the same pan, add the onion and garlic and saute until the onion becomes translucent. Deglaze the pan with the Marsala wine and add bay leaves and parsley. Lower the heat and return the pheasant to the pan. (Wash and dry the utility platter and keep handy for the cooked pheasant.) Cover and simmer until the pheasant is tender and juices in the thigh run clear when pierced, about 35 minutes. Remove the pheasant to the utility platter and allow to rest until cool enough to handle.
  • Strain the braising juices into another pot and skin off any excess fat. Add balsamic vinegar and brown sauce and cook over medium heat until thickened.
  • Pull pheasant meat from the bones and cut into 1-inch pieces, discarding bones. Remove sauce from heat. In a bowl fold pheasant meat with enough sauce to coat. Do not feel obligated to use all of the sauce. The mixture should not be soupy.
  • Preheat oven to 400 degrees F.
  • Roll out the pastry dough and, using an appropriately sized cereal bowl or small mixing bowl as a template, cut 4 rounds 8-inches in diameter.
  • Spoon the pheasant mixture evenly into 4 individual ovenproof 6-inch bowls (onion soup bowls are ideal for this), and brush the edges of the bowls with egg. Top each with a circle of pastry, draping the crust over the rim. Brush the tops of the pastry with the egg wash and bake until golden, about 12 to 15 minutes.

PHEASANT WITH CRANBERRY HONEY

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 1h5m

Yield 6 servings

Number Of Ingredients 12

1 cup raw bacon, chopped (about 1/2 pound or 6 to 8 slices)
3 (2 to 3 pound) pheasant, separated into legs, breasts, and thighs
1 cup dry red wine
1 pound pearl onions, blanched for 2 minutes in boiling water and skins slipped off
1 teaspoon cracked peppercorns
2 bay leaves
1 tablespoon chopped fresh tarragon leaves
Salt, to taste (about 1 teaspoon)
1 tablespoon chopped fresh mint leaves
1/4 cup honey
1/4 cup sour cream
6 small sprigs fresh mint, for garnish

Steps:

  • Render bacon in a Dutch oven over medium heat. Add pheasant parts and sear on all sides, then add red wine and onions. Sprinkle cracked pepper, bay leaves, tarragon, salt and mint over pheasant parts. Reduce heat to low and cover pot. Cook until tender and juices run clear (no longer pink), about 25 minutes. Remove pheasant carefully to a utility platter, cover and set aside to keep warm. Transfer liquids from pot to a heat resistant glass container (such as a 2 or 3 cup measuring vessel) and allow the layer of fat to rise to the top. Spoon or pour off most of the fat and return the rest of the juices, herbs, bacon and onions to the pot over medium heat. Add cranberries to the sauce and cook until the berries pop to make a rustic sauce. Remove from heat, discard bay leaves, and whisk in honey and sour cream.
  • Arrange pheasant on serving dish, spoon sauce over, and garnish with mint.

Time 3h

Yield 12 to 16 skewers

Number Of Ingredients 9

3 pounds London broil
2 teaspoons Irvine Spices Smokey Rotisserie Seasoning
1 cup red wine (1/2 cup for marinating and 1/2 cup for sauce)
3 tablespoons Worcestershire sauce
1 tablespoon olive oil
3 red bell peppers, stem and seeds removed and cut into 1-inch pieces
3 yellow bell peppers, stem and seeds removed and cut into 1-inch pieces
3 white onions, peeled and cut into 1-inch wedges
12 to 16 long wooden skewers, soaked in water for at least 25 minutes

Steps:

  • Rinse the meat to remove any unwanted smells and pat dry with paper toweling. Season the meat with Smokey Rotisserie Seasoning and rub in well. Cover with plastic and let sit for 25 minutes. Cut the meat into 1-inch cubes, then place the meat in a bowl and pour in 1/2 cup of the red wine (reserving the other 1/2 cup), and let marinate for a minimum of 2 hours or overnight, if possible refrigerated.
  • Whisk together the remaining red wine, the Worcestershire sauce, and the olive oil to make a sauce.
  • Place red bell peppers, yellow bell peppers and onions on skewer in this order: red pepper, beef, onion, beef, green pepper, beef, etc. (With 3 pounds meat you will probably have around 48 cubes of beef, so you can put 3 or 4 beef cubes per skewer.) Grill on all sides, brushing with sauce as it cooks. Let vegetables caramelize and lightly blacken beef, being careful not to burn.

1 teaspoon garlic, minced and sauteed until translucent
2 tablespoons tomatoes, concasse (peeled, seeded and diced)
2 tablespoons green onions, chopped
2 tablespoons cremini mushrooms, finely chopped
1 teaspoon sage, finely chopped
4 slices bacon
salt and pepper
4 sheets puff pastry, 5 x 5 inches
1 egg, beaten

  • Sear well in a pan with butter and let cool.
  • Mix Brie, shallots, garlic, tomato, onion, mushrooms and sage.
  • Season to taste.
  • Stuff ¼ of cheese mixture under the skin of each cooled breast.
  • Wrap each with a slice of bacon.
  • Wrap with puff pastry.
  • Brush top with beaten egg.
  • Bake at 425 degrees for 12-15 minutes.

Tips:

  • Mise en place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid any scrambling.
  • Choose a high-quality pheasant: The quality of the pheasant will greatly impact the final dish. Look for a bird that is plump and has a moist, smooth skin.
  • Brine the pheasant: Brining the pheasant in a mixture of water, salt, and sugar will help to keep it moist and flavorful. You can brine the pheasant for up to 24 hours, but 8-12 hours is usually sufficient.
  • Stuff the pheasant: The stuffing for pheasant colette en croute can be varied according to your taste. Some popular options include a mixture of ground pork, sausage, and herbs; a mixture of wild rice, mushrooms, and nuts; or a simple mixture of bread crumbs, butter, and herbs.
  • Wrap the pheasant in puff pastry: The puff pastry will help to keep the pheasant moist and juicy during baking. Make sure to seal the pastry tightly around the pheasant.
  • Glaze the pheasant: Before baking, brush the pheasant with a glaze made from egg yolk, cream, and water. This will help to give the pastry a golden brown color.
  • Bake the pheasant: Bake the pheasant in a preheated oven until the pastry is golden brown and the pheasant is cooked through. The cooking time will vary depending on the size of the pheasant.

Conclusion:

Pheasant colette en croute is a delicious and impressive dish that is perfect for a special occasion. With careful preparation and attention to detail, you can create a dish that will wow your guests.
