There is nothing like Homemade Applesauce both in flavor and texture. If you use ripe apples to make applesauce, you don't even need to add sugar.

10 lbs apples (very ripe (any variety))
1 1/2 cups water
2 Tbsp granulated sugar ((optional), or add to taste)
cinnamon ((optional), to serve)

Steps:

  • Peel, core and slice all of the apples.
  • Into a large stockpot, add 1 1/2 cups water and 2 Tbsp sugar. Place over medium heat and bring to a boil to dissolve sugar. Add all of the sliced apples, reduce heat to low then cover with lid and cook for 1 hour, stirring occasionally.
  • Mash apples to desired consistency, using either a potato masher, an immersion blender, or an electric hand mixer.
  • Once applesauce is at room temperature, serve with cinnamon if desired. Refrigerate, freeze, or can for longer storage.
  • Wash and sterilize 8 pint-sized jars and lids. Use a ladle and funnel to pour hot applesauce into sterilized jars. Wipe the jar rims clean with a paper towel.
  • Fill a large canning pot 1/3 full with water and bring to a boil. Place applesauce jars into the hot water, making sure they are covered by 1-2 inches of water. Return to a boil and process for 20 minutes.
  • Carefully remove from the water using a jar lifter and place them right side up until they reach room temperature and lid suctions in and seals. The lids should not pop when sealed correctly. If any jars do not form the seal, refrigerate and enjoy within 2 weeks.

4 granny smith apples
1/2 teaspoon cinnamon (optional)
1 pinch nutmeg (optional or to taste)
1/4 cup water or 1/4 cup apple juice
3 -6 tablespoons sugar (or to taste add in more if you prefer sweeter, can use brown sugar if desired)

Steps:

  • Peel, core and slice the apples.
  • Place apples in a large microwave-safe bowl.
  • Add in 1/4 cup water, cinnamon (start with 1/2 teaspoon) and nutmeg, if using; stir to combine.
  • Cover with heavy microwave-safe plastic wrap (leave a little side opened to allow steam to escape).
  • Microwave on HIGH power for 10 minutes.
  • Remove the bowl and stir the apples, then contine to microwave uncovered until apples are very tender (about 5-6 minutes longer).

A farm-girl friend of mine taught me how to make applesauce about 10-years ago, and recent trips to a local orchard brought all her teaching back to me. This can be made with a food processor, but I love the way the Foley Food Mill separates out the peel and strains to sauce to the perfect consistency. I think it is a must have kitchen utensil that can be passed from generation to generation! I choose Empire apples because they have a perfect texture for sauce and the sweet-tart taste I love! (If not using the Foley Mill, I suggest peeling and coring before cooking. You won't have to pick out the peels later then. You can either use a food processor or just a potato masher depending on how chunky you like your sauce)
